Skirt skiiiiiiirt steak 🥩 🤤.
.
This was not meant to be a post but it was too good not to share!
.
Skirt steak, sprayed with a little oil, salt & pepper, cooked on a @barbecue.b.o.i smash blade on the @oklahomajoes rambler. A quick little cook for dinner which turned out better than expected, I can’t begin to describe the melt in your mouth moment of that first bite of this beauty cut of beef.

Absolute killer!!
.
Tri tip! Seasoned with @meatchurch Blanco & @boococksbutchery signature seasoning! Reverse seared of the @weberbbqausnz kettle. This is a lean cut so you can bet for damn sure it was slathered in some beef tallow to get those flames cranking on the sear!
.
And of course it’s enjoyed with the best in the game @elchori.oz chimi!

.
The best rib eye steaks @vintagebeefco from @boococksbutchery, the perfect steak seasoning from @meatchurch, a pour of the best @buffalotrace and of course the Liga Privada No.9 from @drewestateinternational it really doesn’t get much better!

Birria tacos!!! 🌮 🌮
.
Damn these things were good!! Shoutout to the best butchers around @boococksbutchery for the amazing @capegrimbeef chuck roast, cut into cubes and smoked on the smoker for that amazing Smokey flavour, braised off and folded into a cheesy taco and of course dipped into that tasty consomè.
.
It’s been a minute since the barbecue has been going solid for the cooks, let’s see if this ignites that flame again.

Why make your own chimi when you can just get the best of the best @elchori.oz chimi! The OG chimi was banger….. the zesty coriander chimi….. NEXT LEVEL! Im not a fan of coriander at all so I was very sceptical about it but like I said the the team there is absolutely insane! Do not let the name fool you, it’s the amazing taste with a bit more kick to it and rocks the steak and eggs like nothing else!
.
Well done team it’s amazing!

Just a couple classic cheeseburgers.
.
Nothing flashy just good quality meat (shout out to @boococksqualitymeats once again), ketchup, mustard, pickles, onions and brioche buns.
.
Could definitely demolish about 5 of these bad boys!
.
Enjoyed with a @sailorjerry on ice and @caocigars Amazon cigar for the cook to wind down the evening.

@pureblackwagyu deserves its own post! This steak was AMAZING!
.
Seasoned with just salt and slapped on the @weberbbqausnz kettle over hot briquettes and enjoyed the way it should be, with eggs, avocado and of course a cold @coorsaus to wash it down with.
.
This kind of steak makes me miss butchery and finding top quality meats, cuts and suppliers… luckily for me @boococksqualitymeats is a go to shop to get my meaty needs.
