“Great Classic Spam Recipes of the World” by Dorothy Horn. 1994 The Green Pagoda Press spiral-bound paperback.

Seeing as the turds in charge of the world want to see us rationing canned meats, I figured it would be a great time to share this dense volume of SPAM dishes so that we’re all prepared. Compiled by the obnoxious missionary who brought us the Guam cookbook I posted previously, she did the Lord’s work here collecting around 500 recipes from around the world using the infamous “spiced ham”. I have a feeling she made some of these up, but ether way this one runs DEEP. It’s also one of the only titles I’ve actually had to seek out and buy online, as 95% these books I share were basically found in the trash.

There are recipes in here from Sri Lanka to Saipan, but it’s heavily focused on the Pacific, and rightfully so. This mysterious meat became immensely popular in Hawaii after the attack on Pearl Harbor, where US troops were guzzling cans of it. I recently had Musubi with Portuguese sausage, which might be the better option, but with SPAM it’s a classic, If you don’t enjoy it now, I pity you in the apocalypse, because with its 5 year expiration date, it makes the perfect bomb shelter snack.

There’s too many cool dishes in here to fit in IG’s ridiculous word limit, so just check out the pictures. I’ve also included the index. This one recently sold (and heads up it’s quite rare and expensive). Here’s my personal favorite from Hong Kong:

Home Made Spam and Snake Soup

1 can SPAM, Chopped
2 pounds snake
4 cups water
Salt and pepper
2 tbsp corn starch
1 cup bamboo shoots
2 cloves garlic, minced
5 Chinese mushrooms, soaked and chopped
2 cups chicken stock
Parsley for Garnish

METHOD:

Prepare snake by chopping into match-stick slices. Boil in water with salt and pepper. Add SPAM and remaining ingredients to pot. Simmer and Thicken with corn starch. Simmer again for 3 minutes. Serve hot with a sprinkling of sprig parsley. Yield 4 servings. More if you let the guest know what is in it before you serve it.

“Hostess Delights Cookbook” by Home Interior & Gifts Dallas, Texas. 196? self-published spiral-bound paperback.

Here’s an early 60s book put together by the hostesses of Home Interior & Gift out of Dallas. What that means exactly I’m not sure, but I actually threw up a bit in my mouth looking through this one. I think this is the era that America was supposed to be “great”, which is strange because it would appear these morons couldn’t even feed themselves.

One recipe you find in almost every old white housewives cookbook is porcupine meatballs, little balls of meat with rice sticking out of them. A great depression favorite because the rice was a good binding agent, and you used less meat. I’ve never had them, but my pops said they’re actually pretty good. The original owner of this one loved them so much she even wrote a loving note next to recipe. I said I was going to try to cook some of this stuff for this archive, this might be a good one to start with?

There’s a chipped beef casserole in here that I would shamefully eat. What’s not to love about salty canned meat in a mysterious white sauce? Army men used to call it Shit on a Shingle when ate on toast. I would not eat the “Pepsi Chicken” however. 20 oz of ketchup and a can of my least favorite soda just isn’t my type of marinade.

The standouts in here of course come in mold form. Janie’s “Ain’t This Sumpin’ Salad” is straight up an act of food terrorism. Strawberry jello mixed with tomato soup, celery and olives…what in the fuck man. Maybe the most disgusting recipe I’ve shared so far. This beautifully named one is a contender too:

A Multitude of Sins

1 package lime jello
2 cups miniature marshmellows (sic)
1 cup grated cheese
1 1/2 cups diced celery
1 No 2 can crushed pineapple
1/2 cup chopped walnuts
2 tablespoons lemon juice
1/2 pint whipping cream
1/3 cup mayonnaise

(See pics for instructions, but basically just mix is all together, chill for 12 hours and vomit).

“Shoowy’s Cookbook” by Gramma Shoowy / Julie Baker. 199? spiral-bound paperback.

Here’s a rather heavy one for this day that marks a new milestone in shittiness here in the USA. Grandma Shoowy put together a huge collection of recipes in memoriam of her grandson, who died of an unnamed terminal illness at age 4. Its pages are filled with heartbreaking testimony to Dylan, surrounded by almost 400 meals contributed by family and friends. I’m a rather cynical person and I use a humorous/dickhead tone when talking about most of these books, but I will be tip-toeing on this entry, for it’s incredibly sweet.

The info inside is vague, but from what I can gather it’s from Darrington, WA, and Dylan passed away in the late 90s. I truly love this one as a document of a life taken too soon, and the community that surrounded it. Even when I’m absolutely disturbed by some of the recipes in my collection, I love to think of the good times these people had while sharing the foods they enjoy. Many of these people are dead and gone, and the ones still surviving hold on to their loved ones through these dishes. Some of them are gross, but who am I to shit on someone’s jello mold memories? This one is a great example of why I find these necessary to document and preserve, especially since it might be only remaining copy in existence.

As far as the food in here, think rural white church potluck. Fruit salads, jello, casseroles and lots of simple staples. Check out the photos for some rather strange stuff (Seafood Safari is diabolical), but like I said I’m not trying to roast this one. Here’s one from Dylan’s cousin.

Deby’s Clam Dip

1 can minced clams (save juice 1 can chopped claims (drain)
2 8 oz packages cream cheese 1 tsp mustard
1 tsp salt and pepper 1/2 tsp Worcestershire sauce
1 T lemon juice 4 T dried minced onion
2 T Mayonnaise 1/2 tsp garlic salt

Mix all ingredients together and refrigerate overnight. Server with crackers.

“Dinner On the Table Night After Night After Night” by Jackie Inskeep. 1991 self-published spiral-bound paperback, 87 pages.

I have no idea where this one comes from, or who Jackie is. (Edit: she appears to be from San Juan Island, WA. Thanks @jestorfoe !) First look at this cold, nihilistic cover made me think she hates feeding her family. Nobody would pick this font unless they truly despise life.

Luckily Its contents say otherwise: a pretty basic collection of household recipes you can cook “night after night after night”. Plus some meal prep sections, one she cleverly titled “planned overs - not leftovers”. Not too exciting in general, but things get a little weird.

Lot of Cuisinart recipes in here…fruit soups anyone? Also if you’ve ever needed a great microwaved cajun fish recipe, look no further. The one below is probably just a casserole, and might taste ok, but the name is so unsettling! She claims this is from a James Beard book???

Cabbage Custard

1 small head of cabbage (about 2 pounds), cored and cut in wedges to fit feed tube of cuisinart
3 slices white bread, cut in pieces
1/2 lb cheese, cheddar or Jarlsberg
2 eggs
1 t salt
2 T dijon mustard
2 C Milk

(See pictures for instructions)

“The Cookbook” by Jeanne Fournier. 1970s The Store paperback, 75 pages.

I know it’s been nothing but dead animals around here, so let’s pause the murder for a sec and take a look at this unassumingly-named, co-op cookbook from Lebanon, New Hampshire. Mostly raw and about 95% vegan, it’s only fitting it would have hand-written text adorning brown recycled paper. Like Ram Dass himself laboriously hand-bound each copy while munching on a big bowl of tabuli.

Never seen another copy online or in person other than the one pictured above. Pretty common for a lot of these; they’re rare, but…who cares? I always hope there’s someone still alive who does, and I like to think the person sho bought this one off me was part of this community in the 70s.

Everything in this one looks great, I’m eating it all before the drum circle begins. There’s a Vichyssoise soup, a bean loaf, and several booze recipes using plums, dandelions and clover flowers. Plus information on where to get good produce in the NH area 50 years ago. Here’s a recipe for a Finnish Christmas casserole:

Turnip Casserole (Lanttulaatikko)

2 1/2 cups steamed turnip, mashed
4 t. Butter or wild
1 1/2 t salt
1/8 t kelp
1 1/2 t honey
2 eggs, beaten
1 1/4 cups soft breadcrumbs

Combine all ingredients but 1/4 cup crumbs. Put into oiled casserole. Top with remaining crumbs. Bake at 350 for 30 minutes till brown on top.

“Gourmet Style Road Kill Cooking and Other Fine Recipes” by Jeff Eberbaugh. 1991 The Printed Press spiral-bound paperback.

Another one to file in the “I only eat what I kill” section from redneck comedian and registered nurse Jeff Eberbaugh. He published several low brow comedy books in the 90s, mostly held together by lovely spiral combs. There’s a somewhat insane spiel on the back about how road kills are necessary to deal with over-population of the animal kingdom.

The majority of this book consists of various yarns about highway meat written in “poetic form”. They’re basically roadkill raps, occasionally accompanied by some lovely hand drawings. Included are paeans to groundhog hoagies, possum on an oak plank, and copperhead sandwich spread. The last section of the book contains “real” game ecipes the author collected from old timers in rural West Virginia. I think the Marlin Firearms recipes look better, but there’s a few gems in here.

Scalloped Tongue

1 pint of chopped beef tongue
2 teaspoons onion juice
2 teaspoons chopped parsley
1 teaspoon salt
1 teaspoon capers
1 cup bread crumbs
1/2 cup stock
3 tablespoons butter

Butter the scallop dish, cover the bottom with bread crumbs. Mix meat with parsley, salt, capers and peppers. Distribute this over the bread crumbs. Add some of the butter between layers, pour the stock and onion juice over all and add the remaining crumbs and butter for the top layer. Bake 20 minutes in 350 degree oven.

Absolutely fucking ridiculous, and I have vol II as well!

Random Recipe: Burning Bush

“And the angel of the Lord appeared to him in a flame of fire out of the midst of a bush; and he looked, and behold, the bush was burning with fire, yet the bush was not consumed. The bush was not consumed, because the burning bush was not an actual bush, but a beef filling for a grapefruit. Nobody wanted to eat that shit”.

Exodus 3:2-5

“Game Recipes From Marlin” by Marlin Firearms. 1980 Marlin Firearms spiral-bound paperback, 37 pages.

Marlin Firearms didn’t have to go so hard with this cover, but I’m not complaining or anything because it’s incredible. Totally obliterates the entire still-life canon. There’s just no better time to pull out your 2nd amendment then while you Julienne some mushrooms.

A collection of recipes you have to kill to eat, this is one of several gun company game cookbooks out there. The menu here is crazy, and most of it looks amazing. Planked bear steak, crabapple venison roast, Black Forest boar, yes to all of it! If this kind of meat excites you, I suggest you follow the GOAT immediately @bsdiningexperiencesc

I went ahead and picked the smallest critter to highlight:

Ozark Squirrel with Mushrooms

1 squirrel, cleaned, dressed and disjointed
1/3 cup flour
1 tsp salt
1/4 tsp pepper
6 strips bacon, diced
1 clove garlic, minced
1 tsp thyme
1 tbsp tomato paste
2 cups chicken broth
1 cup mushrooms, sautéed in butter

Dredge squirrel in seasoned flour. Cooked diced bacon over moderate heat and remove browned bits. Saute squirrel in bacon fat until browned on both sides. Add garlic, thyme, tomato and chicken broth. Cover and simmer about 1 hour or until tender. Serve with sautéed mushrooms, grits and green salad. Serves two.
(FYI I in no way endorse any gun companies, fuck them all. Responsible gun ownership, hunting, and eating squirrels are all ok with me though).

“Paddler’s Potluck Cookbook” by Hui Heihei Wa’a Outrigger Canoe Club. 199? self-published paperback, 58 pages.

Sorry for the silence everybody. I’d say the election results had me hopeless and unmotivated, but the violently stupid current administration already has me bracing for the end. I only hope hell comes for all of them, the sooner the better. Anyways, we like actual people and food around here, not bullshit cults.

Here we’ve got Hui Heihei Wa’a, an organization that promotes outrigger canoe races in the PNW and Hawaii, and cultural exchange between Pacific Islanders and the rest of the world. There’s lots of the cannon in here, spam musubi, kalua pig, multiple lua laus. Plus deep dish pizza, cheese balls, and of course a few loafs.

Pretty sure some of the whiteys in this club contributed recipes, but still everything in here checks out as edible. Most of them look rather delicious, the beef tongue lua laus particularly have me drooling. So do these:

Traditional Turkey Tails Laulaus

12 turkey tails
1 china chef roast chicken base 1 lb salted butterfish
2 lbs lu’au
12 ti leaves or 6 aluminum foil 12” x 18”

Rinse turkey tails with water and dry with paper towels. Place into a large bowl and sprinkle roast chicken base over it. Press into turkey tails thoroughly. Cut butterfish into six pieces and soak overnight to de-salt. Rinse ti leaves. Pile luau upside down in a circular pattern pushing the stems to the side. Place two turkey tails and one piece butterfish in the center of the luau. Take laulau and wrap the luau over and around the filling into a tight bundle. Use ti leaves or foil to finish wrapping. Pack the luaus in stackers. Steam for 4 hours. Cooking time begins when the last stack is put into place and the pot is covered.
