Spring is for carrot cake 🥕🍰

CAKE
⅓ cup butter (76 g)
½ cup walnuts, coarsely chopped (60 g)
1 cup flour (125 g)
2 tsp cinnamon
½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup brown sugar (110 g)
¼ cup sugar (50 g)
1 large egg
¼ cup Greek yogurt (60 g)
1 tsp vanilla extract
1 ½ cup grated carrots (about 2 large carrots)
3 tbsp toasted black sesame seeds, divided

FROSTING
½ cup unsalted butter, at room temperature (112 g)
½ cup cream cheese, at room temperature (112 g)
1 ¼ cup powdered sugar (300 g)
½ tsp vanilla extract
¼ tsp salt

1. Preheat oven to 350°F. Grease a 10 x 6 in loaf pan and line with a piece of parchment paper.

2. In a small saucepan, melt ⅓ cup butter on medium heat, then let brown using a whisk or spatula
to scrape the browned bits as they form. Cook until very foamy, about 3-4 minutes. Add ½ cup chopped walnuts, and keep cooking for one minute or two more, until super nutty-smelling.

3. In a medium bowl, whisk together 1 cup flour, 2 tsp cinnamon, ½ tsp baking powder, ½ tsp baking soda and ½ tsp salt.

4. In a separate bowl, beat together ½ cup brown sugar, ¼ cup sugar, 1 egg, ¼ cup Greek yogurt,
1 tsp vanilla extract and the browned butter and walnut mixture.

5. Add the dry mixture to the wet mixture and stir until just combined, then add the grated carrots.
Don’t overmix!

6. Pour the batter into the loaf pan. Sprinkle with 1 tbsp of toasted black sesame seeds.

7. Bake for 45-55 minutes, until the sides start to pull away and the cake is baked through in the center.
Let cool before icing.

8. Make the icing: in a stand mixer fitted with the paddle attachment, or in a bowl using an electric hand mixer, beat ½ cup unsalted butter on medium-high speed until light and fluffy, 5-7 minutes. Add ½ cup cream cheese, one spoonful at a time, and continue to beat until well incorporated, a couple more minutes. Add 1 ¼ cup powdered sugar and beat until combined, then mix in ½ tsp vanilla extract and ¼ tsp salt.

9. Ice the cake, then grind 2 tbsp toasted black sesame seeds with a pestle and mortar and sprinkle on top. taken in Montreal, Quebec by @_yes__jess

Raise your hand if you feel personally victimized by winter at the moment 🙋🏻‍♀️

I’ve been surviving solely off of soup/stews (and a couple new cookbooks) so I thought I’d share my favourites recipes I made recently 🍲🍜🥣

This is kind of the perfectly decadent holiday dessert (and breakfast, let’s be real). This is probably not the traditional method since I make it using my brioche dough recipe, but it’s very good. Let me know if you make it! 🍫🍞🕯️✨

This makes 2 small babkas 🫶🏻

DOUGH
170g unsalted butter*
1 cup milk*
1 packet active dry yeast (2 ¼ tsp)
3 cups all-purpose flour
¼ cup sugar
¼ tsp salt
1 egg, for egg wash (optional)

FILLING
140g dark chocolate
75g unsalted butter*, at room temperature
⅓ cup brown sugar
¼ cup cocoa powder
A pinch of flaky sea salt

SIMPLE SYRUP
½ cup water
½ cup sugar
1 cinnamon stick

TOPPING
¼ cup roasted pistachios, chopped (optional)

*can be swapped for a vegetal alternative

1. In a small saucepan, bring the milk to 105-110°F over medium-low heat (this is called scalding). Off the heat, stir in the butter until melted (if using a vegetal milk alternative, you can melt the butter on the stovetop, then pour in the cold milk). Pour in a large bowl or the bowl of a stand mixer and let cool until it’s not burning to the touch. Stir in the yeast. Let sit 5 minutes or until foamy.

2. Meanwhile, in a separate large bowl, combine the flour, sugar, cardamom and salt.

3. Add the dry mixture to the yeast mixture and stir until just combined. Knead by hand on a lightly floured surface for 10 to 15 minutes, until the dough is smooth and elastic, OR knead with the dough hook in a stand mixer on medium speed for 5 minutes. Shape the dough into a ball. Place in a clean bowl and cover with a dish cloth. Let rise in a warm place for 1 hour, until doubled in size.

4. When the dough is almost ready, prepare the filling: over a bain-marie, melt together the dark chocolate and unsalted butter. Once melted, stir through the brown sugar, cocoa powder and flaky sea salt.

5. Punch down the risen dough. On a lightly floured surface, roll out a 12-by-18-inch rectangle, short end toward you. If the dough is hard to work with, cover it lightly with the dish cloth and give it 5 minutes to relax before finishing to roll out.
