From Suzhou to Madrid: Bringing Chinese flavors to the global stage 🇨🇳✨

If cocktails are a language, we’ve always wondered: What should Chinese cocktails sound like?

This September, KIDSMO is thrilled to announce our very first European guest shift at Scratch (@scratch_madrid , a high-energy, independent cocktail lab located in the vibrant heart of Lavapiés, Madrid.

As a creative cocktail bar from Suzhou, our goal has always been clear: not just replicating Western classic specs, but introducing authentic Chinese ingredients and flavor profiles to the world—giving Chinese mixology its own distinct voice.

For this special night, Lio.Yao has crafted an experimental guest menu:

🦀 Penixiellin
Inspired by the iconic autumn river crabs of Jiangnan. We reimagined the Penicillin with the roasted warmth of ginger and Oolong, elevated by the rich, mellow depth of traditional Chinese Yellow Rice Wine.

🌶️ Made In China
Pushing savory cocktails to the limit! We fat-washed Gin with Laoganma chili crisp, pairing it with tomato juice and whey. A touch of coriander and sesame oil brings out an unexpectedly addictive savory complexity.

🍕 Pizza Martini
Smoky Mezcal meets clarified tomato and velvety basil yogurt whey, finished with a subtle Hojicha tea note. Liquid pizza, but make it refined and perfectly balanced.

🚬 Cigarettes After Sex
Peaty smoky whisky and bone-dry Fino Sherry, softened by the delicate sweetness of Asian plum wine and refreshing coconut water. Deep, moody, and the ultimate nightcap.

Chinese flavors go far beyond tradition—they can be playful, avant-garde, and deeply modern.

Nos adentramos en el fascinante recorrido de Fernando , un experto en hostelería cuyo camino lo ha llevado desde Costa Rica a Francia, Italia y Reino Unido, para finalmente aterrizar en Madrid y abrir su propia coctelería: Scratch, ubicada en calle Argumosa, en el barrio de Lavapiés.

Hablamos sobre los desafíos de abrir en barrios menos turísticos, la caída del consumo de alcohol y cómo este fenómeno está cambiando el panorama de la coctelería. Además, Fernando nos comparte su consejo clave para llevar a cabo una apertura exitosa.
