Summer recap: I traveled to Paris, Dublin, New York, and Seattle. Had multiple night outs with my girls that were full of libations and giggles. Tons of gossip sessions with my sistas. Went on many city walks…shoutout to my girl Alex! Met some new boobears 👀. Spent quality time with my nephews(a great reminder that I love not having kids of my own lmao!). Enrolled in culinary school(such a Gemini thing of me to do). Got a couple more tattoos. Cussed a few people out then asked God for forgiveness🙏🏾. Honestly, this was one of my favorite summers ever. I wish I could post all the photos I took but that’s too MURCH! I truly be minding my business and living my best life 🤎 taken in Paris, France by @acoolauntkp

Today would’ve been Foxybears 18th birthday, and my heart feels especially heavy. I miss her more than words can say. She was my first child, my fierce little protector, and my favorite travel buddy. I rescued her when she was just 4 months old, and from that moment on, she ran the show with sass and strength. She was strict, ran a tight ship, and had absolutely no patience for men...she bite every boyfriend I ever had LOL. She had the funniest, most unapologetic spirit. She kept me grounded, kept me laughing, and kept me safe.
She passed away in May, and it’s been so hard not having her around. The silence she left behind is loud. There will never be another Foxy, she was truly one of a kind. 🤍🐻🐾 love you platypus taken in Chicago, Illinois by @acoolauntkp

Happy Fri-Yay loves!!! It’s been a minute since I posted one of my vegan creations 🥴 I needed to take a little mental health break from the socials🤎 anyways I’m back! Açaí bowls are literally my favorite! They are the perfect snack or breakfast option. Açaí has many health benefits, just look it up! One of my favorite places to grab one, is from @pressedjuicery I usually order the Açaí Power Bowl and add coconut & agave! So bomb!! Made a lil vegan dessert! Mini Peach Pastry with a sweet peach cream and a scoop of macadamia nut ice cream!
The jury is still out on Reels! This is my 1st one if you couldn’t tell 😭👀 I enjoy my TikToks but we I don’t mind creating Reels here and there. #vegandessert by @acoolauntkp

A Cool Aunt Tip: It’s okay to take some time for yourself, to be unavailable to your friends and family! If you struggle with constantly being “on” and feel guilty for not responding to a text or answering a phone call, don’t! Your friends and family who know your heart will respect your boundaries. I’m a true believer in taking time to recenter yourself. I do this by taking short getaways, meditating and spending quality time alone! This past week my focus was spiritual wellness! I am blessed and I am grateful. As I continue to receive blessings I will continue to share those blessings!

I’m always in the mood for pasta! Especially if it’s Aglio e Olio. This one of my favorite go to meals if I’m in rush. It’s so dang easy to make and it’s incredibly delicious. Check out the recipe below and if you make it, tag me to let me know ☺️

*Ingredients*

1 package of Spaghetti (De Cecco No.12)
1/2 cup chopped parsley
6-8 garlic cloves
1/2 cup olive oil
1/2 cup pasta water
1 tsp red pepper flakes (sub option 1-2tsp @traderjoes chili crunch)
Kosher salt
Black pepper

*Steps*
Boil water & HEAVILY salt your water! Add enough and you won’t need to add salt to the pasta 😉
Add pasta and cook for 5mins

While pasta is cooking, chop garlic and add to large skillet on medium heat. Add oil + red pepper flakes and stir well. Be sure temp is not too high so garlic does not burn. Once pasta is done, add to skillet along with pasta water and stir well until it becomes creamy. Pasta will finish cooking in skillet for 3-4mins. Top with parsley, black pepper and enjoy!! taken in Mission Valley by @acoolauntkp

Today was perfect in every way! I celebrated MLK DAY with my loves on zoom! We cooked together, laughed and took time to reflect on how far we’ve come. We still have work to do however, I have faith that things will get better 🤎✊🏾

WE DID IT! We survived the 1st week of 2021(BARELY) LOL. I don’t know about y’all but I’m taking a break from the news to plan out my weekend menu and these tacos are on it!! Mexican food is my absolute favorite and I miss birria tacos so I had to recreate them with mushrooms🤤 how’d I do? This time last year I was in Panama living my best life. Fast forward to today and I’m in my kitchen making focaccia 😭😫.....I miss traveling! However, I’m grateful for the experience I had last year. 2020 was my year of growth. I shed some thug tears and celebrated some amazing successes.
