42hrs in Mexico City: looking at schools, walking our new neighborhood, taking it all in. This trip felt different than the rest, because it was — excited, sentimental, eager, cautious, head strong and curious. The emotions pulsing through me 💙 making this move with @douglasok for our family feels totally adult and kiddish all at once by @adealennox

Remember that 6lb zucchini?
Wanted to do some kind of pasta bake situation but also wanted a snack and also needed to feed baby Ren something quick so..

Scoop out the zucchini middle. Cross hatch the surface. Salt. Sweat it. Pat dry. These are the vessels for the bolognese.

Layer of mozzarella, bolognese, grated parm or Gouda or both! Honestly the more sauce the better. Could have made more bolognese. I made up for it by pouring in some chicken stock to the baking pan to help soften the zucchini’s while in the oven.

The texture of the zucchini boats was perfect. Firm but soft, never mushy.

Cabin camping with a 1yr old and 3yr old hits different 😂😭 — would not recommend. The things we do for meaningful, intentional time spent with family! Our girls now have their heights marked in pencil on the doorframe alongside generations before them. This, bathing in the lake, dinners on the deck, and the exceptionally quiet mornings before the girls woke up, made it worth it. When they get older, we will be back for more by @adealennox

One year old today 😭 our second baby girl, and our very first and only Ren. She is the light of the moon on wet grass, she is the sound of strong wind blowing through the branches of the oak trees in our front yard, she is a smooth stone on the bed of a shallow brook, she is the “bounce” of a PVC beach ball and the smile of a child who catches it. Our lives are changed for the better forever! @douglasok
