Too busy with exams so I cheated a bit with jar sauces for this chicken parm & pesto pasta 😅
Chicken:
- 4 Chicken Breasts, sliced and flattened
- 1/3 cup flour
- 1/2 tbsp pepper
- 1/2 tsp paprika powder
- 1/2 tsp italian seasoning
- 1 egg
- 1/2 cup panko breadcrumbs
- 1/3 cup grated parmesan

Pasta:
- pasta of your choice (I used linguine)
Depending on which you choose you can make your dish BJ’s Style: Alfredo and Marinara or Adelle’s Craving Style: Pesto and Alfredo

Directions:
- Preheat oven to 425° F
- Trim excess fat on your chicken, flatten and cut in half if needed so they cook evenly
- Set up your breading station: Using 3 plates pour your flour onto one with the seasonings, another bowl with your beaten egg, and your panko breadcrumbs mixed with your parmesan in the third plate
- Dip your chicken one by one in flour mixture, egg, then your panko until your chicken is well coated and place on a baking sheet with parchment paper
- Lightly spray your chicken with cooking oil (I used avocado oil)
- Place in the oven and let it bake for 20-25 minutes, flipping halfway through 🚨depending on the size of your chicken it may need to be cooked longer. Chicken must be cooked to an internal temp of 165° F to be food safe🚨
- take your pasta boiled per package directions and mix with your choice of marinara or alfredo
- Coat your chicken with a generous layer of pesto or alfredo, top with some more grated parmesan

Summer in a muffin liner with these lemon poppyseed muffins! 🍋🧺
What you’ll need:
Muffin:
* 2 3/4 cups all purpose flour
* 1 tbsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 2 1/2 tbsp poppy seeds
* 1 1/4 cup granulated sugar
* Zest of two lemons
* 1/2 cup unsalted butter, melted and cooled
* 2 tbsp vegetable or avocado oil
* 2 eggs at room temperature
* 3/4 cup buttermilk
* 1/4 cup Greek yogurt, 2% or higher or full fat sour cream
* 3 tbsp lemon juice
* 1 tbsp vanilla extract
Streusel:
* 1/4 cup unsalted butter, melted
* 6 tbsp granulated sugar
* 1/2 cup All purpose flour
* Pinch of salt
*
Directions:
1. In a medium mixing bowl, combine granulated sugar and lemon zest. Use fingers to rub the zest into the sugar until the lemon aroma comes out and looks like wet sand. Set aside.
2. Whisk the flour, baking powder, baking soda, salt and poppy seeds together in a large bowl. Set aside.
3. Add butter and oil to the lemon sugar and whisk to combine.
4. Add one egg at a time, mixing between each egg until smooth.
5. Add the buttermilk, greek yogurt, lemon juice and vanilla, mix until combined and smooth.
6. Pour the wet ingredients into the dry ingredients and fold gently to combine. 🚨Be careful not to over-mix.
7. Cover the bowl with plastic wrap and let the batter rest for 45 minutes.
8. Line a muffin tin with paper. Note: these muffins tend to expand, I suggest using every other muffin well (ex: 6 in a 12 ct muffin tin)Set aside.
9. While the batter is resting, make the streusel topping by combining all the ingredients for the streusel in a small bowl. Use a fork to stir together until the mixture looks crumbly. 💛CONTINUED IN COMMENTS 💛 by @adelle.icious

✨ Welcome to my kitchen! ✨
I’m a pre-nursing student (soon to be nursing student 🤞) with a big heart for cooking. Growing up, I spent time in the kitchen with my mom, watching her pour love into every dish and dessert she made — and seeing how food can bring people together inspired me to do the same.
This page is where I’ll be sharing my favorite recipes and little pieces of my heart through cooking. Thanks for being here — let’s make something Adelleicious 😽 by @adelle.icious
