What if everything we’ve been told about aging is wrong?

This is my 95-year-old uncle, Pa Victor Wambeh. He walks with ease, jumps steps, and lives independently—no walker, no chronic medications, just vibrant health with a heart full of laughter and wit like no other.

Yet, in America, we’ve normalized aging as a slow decline. Nursing homes are filled with people in their 70s and 80s who are merely surviving. But it doesn’t have to be this way.

❤️ I asked Pa Victor his secret. He smiled and said:
"I never eat until I’m full. I eat until I’m 80% satisfied, and most days, I eat only once or twice."

Science is just now catching up to what our ancestors have always known.

Aging well isn’t luck—it’s a strategy. The way you live today determines the way you age tomorrow. So ask yourself:
👉🏾What do you want to be able to do at 80, 90, or even 100?
👉🏾What habits do you need to build today to make that possible?

❤️This is just the beginning of a series I’m calling Lessons from My 95-Year-Old Uncle. He spent a month teaching me about indigenous herbs, food, and the wisdom that has kept our elders thriving. I documented it all, and I can’t wait to share.

Would you be interested in learning more about these ancestral health practices? Let me know in the comments!⬇️

I love this quote by Keith Ellison

“Not voting is not a protest. It is a surrender.”

For the life of me, I will never understand why anyone who has the right to vote chooses not to exercise it.

A few months ago, I came across a video that was going viral in which someone famous was justifying why they don't vote. I was genuinely shocked. What an irresponsible message to put out into the world, especially when so many people look up to you.

Too many people fought, struggled, suffered, and died for the right to vote. Their sacrifices helped make it possible for every eligible American to exercise this fundamental right.

Please don't take that for granted.

❤️ Voting is more than casting a ballot. It is taking responsibility for your choices, having a voice in the decisions that shape your life, your community, and the future of generations to come.

You don't have to agree with everyone. You don't have to love every candidate. But you should never surrender your voice by choosing not to participate.

PLEASE GO AND VOTE. Like your life depends on it, because it does.

I keep thinking about the adults in our children's lives, because teaching kindness begins with us.

Children don't learn kindness, empathy, respect, or accountability in isolation. They learn by watching us.

They watch how we speak about people who are different from us, how we respond when someone is hurt, and whether we stand up for what is right or look away because it is uncomfortable. They also watch when parents defend behavior that should be corrected and when communities become desensitized to violence.

We cannot demand kindness from children while modeling cruelty. We cannot teach respect while tolerating humiliation, intimidation, or hate.

Kindness is a choice, a practice, and a way of moving through the world. It starts in how we speak to the person serving us, how we treat our neighbors, and how we respond when someone sees the world differently. It means choosing compassion when judgment would be easier.

❤️ And it starts at home.

Let's raise children who know their worth without believing they are worth more than someone else. Children who can stand confidently in who they are while making room for others to be different. Children who understand that respect is not reserved for people who look like us, think like us, worship like us, or live like us.

We don't have to agree on anything, but we can always choose to recognize one another's humanity.

Jesus taught us to love our neighbors as ourselves. Imagine what could change if we made that more than a verse we quote, if we made it a value we live and pass on.

May we each do our part, with intention and love, to create a world where kindness is practiced, differences are respected, and we work for the good of one another.

A beautiful new month to you.

I published my first book at 56, the story behind it is one I love to share.

Bountiful Cooking was born out of a desire to keep teaching.

For years, I hosted free workshops and shared practical ways to nourish our families with wholesome, delicious food. People had questions, and I loved answering them.

But as my business grew, I could no longer create the time to teach as many workshops as I wanted. And I kept thinking about all the people who would reach out with questions I couldn't always answer personally.

🌱Agatha, what pots and pans should I use?

🌱How do I make milk at home?

🌱How do I prepare healthy meals that my family will actually enjoy?

I wanted those answers to be accessible. I wanted people to have something they could keep in their kitchens, reach for whenever a question came up, and learn from at their own pace.

So I put years of knowledge, practical guidance, recipes, and my love for nourishing food into Bountiful Cooking, published by @hachettego @hachetteus in 2023.

On this National Authors Day, I am reminded that sometimes the most meaningful things we create come from simply wanting to serve others.

And perhaps that's the encouragement someone needs today: your experience, your knowledge, and the things you have learned along the way may be exactly what someone else needs. Don't underestimate what you have to share.

If you love good food, want to make healthier choices without sacrificing flavor, or simply want a trusted resource in your kitchen, I would love for you to own a copy of Bountiful Cooking.

Get a copy for yourself, gift one to someone you love, and let's keep passing good food knowledge from one generation to the next.

Can you believe Pa Victor will be 97 in just TWO months?

Some of you remember the video of him at 95, jumping down the stairs. I remember the comments. “No way he’s 95!” “Are you sure?”

This time I thought I’d let the man settle it himself. I asked. He answered.

I can’t believe he is 96, still living independently, walking with ease, full of humor and very much himself. I am not sharing him as a promise that everyone will age the same way, or to suggest that illness or disability is anyone’s fault. I am sharing him because his life invites a question we don't ask often enough:

❤️ What possibilities have we ruled out simply because we were taught to expect less as we get older?

I want us to stop making peace with decline before we have to. Not by chasing youth or pretending we can control everything, but by respecting the body we have and building the strongest foundation we can for the years ahead.

And I have questions for Pa Victor beyond “What’s your secret?” What would he tell those of us who hope to reach his age with our independence and joy intact, as he has?

Who is your Pa Victor? Who is 20 or 30 years ahead of you, living the way you’d like to live? Find them, ask questions, and watch closely.

In the meantime, what would you like to ask Pa Victor? Drop your questions in the comments. I’ll collect as many as I can, and by God’s grace, we’ll answer them with him in another video.

After 40, most women are missing 2 things on their plate, protein and fiber. Muscle loss starts quietly in our 30s and 40s, and it can speed up around menopause. Protein helps preserve that muscle, remember muscle is where your body puts sugar to work. Most of us eat far too little of it especially during lunch.

Let's not forget fiber. Women need about 25 grams a day, and most of us fall short. Fiber slows how fast sugar enters your blood, feeds your gut, and keeps you full, which is why meals without it leave you hungry an hour later.

If you're managing type 2 diabetes or working toward weight loss, meals like this built around good quality protein and non-starchy vegetables will help support your goals.

Ingredients

· Grass-fed beef
· 2 lbs fresh green beans, trimmed
· 3 tomatoes, peeled
· 1 small red onion, chopped
· 4 cloves garlic, sliced
· ½ cup homemade broth
· 1 green habanero, chopped (optional)
· 2 tbsp olive oil
· Sea salt and freshly ground black pepper

Steam the tomatoes to loosen the skins, then peel and crush them. (a helpful step if you’re sensitive to lectins.)

Crush tomato, add onion, garlic, and habanero to the pot. Cook until everything is tender and the tomato liquid has dried.

Season to taste, add broth, olive oil and green beans. Cook for 2 to 3 minutes.

Season the steak with salt and pepper, cook it to your liking, and serve together.

❤️ A little nutrition reminder: Healthy aging isn't about eating less of everything. It's about being intentional about what you eat and giving your body what it needs.

Save this recipe for dinner, and share it with someone who loves delicious, nourishing food!

Most people think that disease happens overnight, it doesn’t.

The body is constantly responding to the environment we create. Our food, our sleep, our stress and what we are exposed to daily. Some of the habits we normalize today may matter more to our future than we realize.

I am 59, have been fully postmenopausal for over 12 years, and have never experienced a hot flash, night sweat, or many of the symptoms commonly associated with menopause.

❤️ I share this because I want us to question what we have been taught to accept as inevitable. I cannot attribute my experience to any single habit, but I have always been intentional about how I nourish my body and what I bring into my home. I avoid heating food in plastic, any plastic in my home has to be BPA-free. Sometimes I get ridicule for taking these things so seriously, but shouldn’t we all be doing the same?

The truth is, some everyday chemicals can act like hormones in the body, and we use them daily without a second thought.

We cannot control everything but we can be more intentional about what we can.

Awareness is the power to make informed choices, my hope is to plant a seed of awareness, once you know better, you can choose better for yourself and your family.

Listen, you don’t have to change everything overnight. Start by questioning 1 habit, learning more and choosing a better alternative where you can. The goal is to live life consciously in this beautiful modern world of ours while protecting our health and give ourselves the best opportunity to thrive.

👉🏾Which of these habits surprised you the most?

A surgeon being interrupted in the middle of surgery on a cancer patient because an insurance company was calling about an approval. Let that sink in.

In the viral video shared by @drelisabethpotter, Dr. Potter describes trying to secure approval for her patient’s overnight stay. The video also highlights a staggering cost difference: an estimate of $240,000 versus her estimate of $17,000 for the same surgery, same patient, same ZIP code, and same surgeon. The patient was also reportedly left with a $100,000 bill after coverage for the overnight stay was denied.

Pls not this is not about one insurance company, but it raises a much bigger question.

👉🏾What happens when a system built to care for the sick has so much money tied to sickness?

Our system tends to make its money when we’re sick. The bills come with the surgery, the scan, the prescription. We spend enormous amounts treating diseases, managing complications, and trying to restore health after it has deteriorated.

I’m saying the money flows toward treating illness, not building health, which is why no one is going to push prevention for you.

Making prevention our responsibility, and our superpower. Yes, not every illness can be prevented. But far more is within our influence than most of us were ever told, real food, daily movement, sleep, stress, and rest. These are the habits that help keep you out of the system in the first place.

A huge thank-you to Dr. Potter for her advocacy work.

Your health is one of the most important investments you will ever make. Please don't wait until you are sick to start treating it that way.

Today, as I was leaving church, I saw a couple I have seen at Mass for 23 years. I have been part of this church community since 2002, and seeing them has become one of those familiar, ordinary parts of life.

But today the wife was helping her husband get out of the car. He looked so fragile, and he seemed unable to get out or walk independently.

I don’t know what they are going through, and I won’t pretend to know their story. But seeing them stopped me in my tracks.

I stood in that parking lot in tears.

Oh, Lord, thank You, thank You for the gift of being alive, for my health, my family, for the ability to move my body, walk on my own, and participate in the simple, everyday moments I can so easily take for granted.

It reminded me how quickly life can change, and how none of us should assume that tomorrow will look exactly like today.

❤️ Please, be kind to yourself, be kind to others. Take care of your health the best you can, rest when you need to, make the call, take the trip, wear the outfit, use the beautiful things you’ve been saving. Tell the people you love how much they mean to you.

And please, stop postponing joy until some future date when life is supposedly perfect.

Do not save everything for a special occasion. Being alive is the special occasion.

You are worth the care, the love, and the effort it takes to nurture your health. Never take the gift of today for granted.

Happy Sunday

With love,
Agatha
