Chopping noises coming from my mom’s kitchen is one of my favorite childhood memories. All my knife skills so far were what I learned from her Japanese home cooking techniques. For my birthday this year, we attended @enjoybrightsidekitchen Cooking School to learn the proper way to peel, cut, trim, skin and chop. For some reason, the art of chopping uniform pieces of whatever ingredient you are preparing is meditative and fascinates me 🤗. Go figure, we all have our “quirks”. We made wonderful memories in Mexico City for Spring 2026. The food scene is impressive and the options are infinite. Pasta making class by chef @joshualanning was a blast. We got lessons on ingredients, technique, flavors and tips on how to make pasta from scratch at home.
