Alice’s great-great-grandmother (Alice & Théo), Valentina, is 85 and has very little sight left.

She grows blackcurrants in her garden and hand-picked them herself, as her own little way of taking part in the family adventure.

And yesterday, our chef Oleg turned them into ice cream.

A little piece of family, from the garden to the scoop

What is Croquembouche?
Popularized by a famous pastry chef, Antoine Carème in the late 1700’s, a croquembouche is a french dessert that is made from stacking profiterole or choux pastry in a tower-shaped structure that sits on a strong circular base. Traditionally, a croquembouche is served as wedding cakes, on baptisms, and on first communions.
