Italian night in the garden! Inspired by our trip to Pietrasanta last July. Hot and humid, fresh bright flavors, incredible community and the best conversation. Love to @rox.design for the outdoor kitchen of our dreams, and to @duplawork for capturing this magical night 🇮🇹 by @allthingswaite

The best of times 😍 🇲🇽 one of my favorite things is watching my best friend become inspired and fired up about this industry we both love so much. The connection and creativity that comes from a festival like this will fuel us for months! In a time that feels extra hard for restaurants we need to double down on creating community around food, and stoking the fire that keeps us all coming back for more.

3 week dry-aged shima aji, wagyu lardo + garden greens… a beautiful blend of sea, and soil. 🐟🌱🤘

There’s something special about taking a fish that’s been aged with intention and pairing it with the simplicity of things you’ve grown yourself. Letting time do its work. Letting the garden speak, and letting great ingredients shine.

This is the kind of dish that doesn’t need a garnish — because the whole salad is the garnish, plus fish.

It’s also a little preview of what might show up on the menu at Waite & Sea this June (6/2, 6/16, 6/23, 6/30): intimate, seasonal, unpredictable, and rooted in what’s inspiring Chef Davin right now.

Seats are filling up. Grab yours at the link in bio.

CURRENT CHAOS with ATW 🔥 by @allthingswaite

What if the things we thought were imperfect were actually the best part? 🌱

We asked Chef @davinwaite what it means to be a restaurant that strives for total utilization, and for us, it’s about having the tools to work with everything — even the ingredients that don’t look “perfect.” Because a lot of the time, that’s where the real flavor is, and that’s what we love to highlight on our menu instead of letting it go to waste. That’s part of the fun, and the magic.

WAITE & SEA IS BACK! 🔥🤘🐟

— For 3 nights only | March 31, April 7, April 14 • 6pm —

This limited-seating dinner brings you face-to-face with the chaos, creativity, and intimacy that defined the early days of Wrench: a small room, curious diners, and the spark of real connection.

Part tasting menu, part food lab, and full-on @davinwaite debauchery, Waite & Sea dives into whole-fish cooking, storytelling, and the ingredients inspiring Davin right now — including plants grown just steps away at @theplotgardenproject that he tends to daily.

Sea meets soil in an intimate, interactive experience that’s always a little unpredictable.

20 seats per night, and we can’t Waite for you to join us.

Tilefish + Dolphin Tears 🐬

Yes. Chef @davinwaite actually made dolphins cry tears of joy because he is that good at cuddling. He also happens to be just as good at breaking down fish, and making something delicious with it.

When the ingredients are pure, the produce is local, and the flavors are fresh, it’s best to keep things simple. Simple as that.

Tilefish, wasabi mustard, dolphin tears + sesame oil.
— on specials this week until we run out.

WAITE & SEA 🔪🔥🐟
— A sushi bar experience with Chef @davinwaite right here at Wrench on Monday and Tuesday nights, beginning May 12th.

Since opening their first restaurant together more than a decade ago Davin and Jess have come full circle, building multiple acclaimed restaurants (and closing a few), only to realize how much they crave the intimacy and connection of a small dining room. Waite & Sea is a hyper-local and hands-on answer to this calling for connection.

The menu will consist of 12+ courses designed to excite, inspire and challenge diners. For those who crave it, a lively conversation will evolve around the tenants of sustainability featured in the meal, the reverence for cultural tradition embedded in their ethos, and a rally cry for a bold new future of food.

Part tasting menu, part food lab, and full of Davin Waite debauchery, Waite & Sea is a rebellious journey in a two hour dining experience and we can’t Waite for you to join us.
