Shake & Bake tofu! Blot dry tofu well, cut into pieces, coat evenly then bake for 12-15 mins at 425 degrees. by @almostdinnertime

Jackfruit fajitas
1 tin or package of shredded jackfruit
1 clove garlic minced
2 tbsp olive oil
lime juice from one lime
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp dried chilli flakes
1 red onion sliced
3 large bell peppers sliced
1) In a bowl mix together olive oil, lime juice, garlic and spices, add jackfruit and coat.
2) In a large pan over med heat with a little olive oil cook onions and peppers for a few mins once just starting to soften add in the jackfruit and cook another few mins till warmed throughly. by @almostdinnertime

Zucchini and basil soup
1 medium onion chopped
2 cloves garlic minced
2 medium potatoes peeled and chopped
900 ml container vegetable broth
1 large zucchini chopped
pinch of fresh thyme
handful fresh basil
1) In a large pot over med heat cook onion and garlic with a little olive oil till soft.
2) Next add in everything else, season with a little salt and pepper. Bring to a simmer and cook until everything is soft. Then puree. by @almostdinnertime
