Dark chocolate peanut butter stuffed cookies 🥜

In theme with Cookie Week on @britishbakeoff, these bakery-style cookies are inspired by the chocolate peanut butter ones from @rhythm108 that somehow always call out to you as you’re walking towards the till in your local Sainsbury’s.

Rich and chocolatey, crisp on the outside and soft in the middle, with pools of dark chocolate and a sweet-salty, gooey peanut butter centre…all things good, basically 😉

Full disclosure: Not my first attempt 🥲 Turns out the secret is abandoning the 100% natural peanut butter and embracing that childhood palm-oil goodness. A humbling lesson in baking.

Lemon cake with cream cheese frosting & blueberry compote 🍋

Finally tried Eric Kim’s Gochujang Cookies 🌶️

The cinnamon cookie base somehow perfectly complements the pools of gochujang brown sugar butter that bake into umami caramel, hitting all the sweet-savoury notes. One chili spice, five stars - a rare combination in my books ⭐

Miso & brown butter courgette bread 🍂

As an avid proponent of carrot cake and banana bread, I couldn’t not try @justine_snacks new recipe. I’m still undecided on courgette in cake, but with the nuttiness of brown butter, savoury depth of miso, and rich pools of dark chocolate - I’m definitely not complaining!

Vegan Banana & Oat Cookies 🍪

Turns out banana bread isn’t the only answer to overripe bananas. These cookies swap egg for mashed banana, making them chewy in the middle and crisp on the edges. Basically banana bread in cookie form, they’re the best of both worlds without the 2020 lockdown flashbacks. I promise they won’t split opinions - just bananas 🍌

Vegan pistachio white chocolate cookies 🌱

Pistachio seems to be everywhere right now (petition for Apple to give us a pistachio emoji)! After seeing the new chunky pistachio cookies at M&S, I couldn’t resist trying to make a vegan version.

These cookies are made with pistachio flour for a rich, nutty flavour and subtle savoury notes (are we calling all ground things flour now?), a generous pinch of salt, sweet white chocolate chunks, and a hint of tangy lemon and yoghurt to brighten everything up.

Vegan lemon drizzle cookies 🍋

I’ve been thinking about my next summer bake for weeks, but I just couldn’t bring myself to turn on the oven 🥵 So I *squeezed* in some baking time the moment the temperatures slightly dropped.

These cookies are essentially the result of two weeks of me dreaming about citrusy baked goods whilst waiting for the weather to cool down. Think lemon crinkle cookie meets a classic bakery-style chewy cookie, topped with a delicate, crackled shell similar to the icing on a lemon drizzle cake.

Carrot loaf with brown butter frosting 🥕

The loaf itself walks the fine line between ‘breakfast’ and ‘sweet treat’, but the frosting pushes it right over the edge. Sweet, tangy, and cut through with that nutty depth only browned butter can bring… I’d happily have a slice for breakfast, 11-sies, afternoon-treat-hour, and dessert.

Vegan Ginger & Dark Chocolate Cookies 🌱

These cookies can be found in one of my favourite bakeries in London @e5bakehouse - imagine my excitement when I got ahold of the recipe!

Made with wholemeal rye flour, candied ginger, treacle, @original_beans dark chocolate, and a blend of spices, these cookies are incredibly rich and decadent. Coated with the crunch of Demerara sugar and perfectly cracked to reveal a chewy centre, they are everything I want in a dark chocolate cookie. taken in e5 bakehouse by @andallthingsgood
