Chapter 4: The People [ Part One ]

At the end of the day, you, your faces, your smiles, your hearts, and your presence the are the most important part of this whole journey.

None of this means anything without you. A celebration is only as big as the room that gathers to hold it, and you filled that room. You came from every corner of the city and far past its borders.

Every color this city holds, every community, every creed, and kind of faith; You came as strangers to each other and left as if you’d known each other for years.

That’s what a table does when it is set with enough love.

You came because something in you understood that a man who cooked in silence for two hundred years deserved his name to be spoken out loud, celebrated in rooms, honoured in reverence. You wanted to be there when his name was finally spoken. Hercules Posey did not just feed a president, he shaped the way this whole country eats, the way we season, the way we serve, the way we gather, long before anyone thought to write his name down or broadcast his legacy.

On this day, it was you who wrote it back into history, one plate, one conversation, one shared table at a time.

You are the reason this collective is not just an idea. You are the reason a celebration becomes a movement. So thank you, for your presence, your curiosity, your open hands and open hearts. This was never just our event. It was always yours.

With more gratitude and love than words can hold, we thank YOU.

Chapter Two: The Food.

Chefs from all corners of the diaspora from Puerto Rico to Trinidad & Tobago to Nigeria to Senegal to Asia to Europe to every West African and every colonialized island nation in between, shades of every colour under the sun all came together to serve monuments to their culture, their upbringing, and their history one bite at a time.

Let us know which of these dishes is still sticking with you to this day, almost two weeks removed from this Celebration of the General’s Cook, Hercules Posey.

More to come, more pictures, more videos, more education, and more details on what’s next for the Oxtail Collective!

Chapter One: The Chefs [ Part Two]

P.S.

Thank you for not staying where they left you.

Thank you for Nigeria finding Italy on a single plate, two homes not intending to meet, shaking hands over olive oil and plantain, proving that love and flavour doesn’t seek permission; only proximity, skill, and time.

Thank you for Trinidad, an island unhurried, small but mighty, humble hands crafting timeless dishes with foods deemed unsavoury. Scraps. Yet still; Sure of its place, sure of itself, sure of its beauty.

Thank you for the Lowcountry and its rice and its ghosts. The blood still runs in the brick prints in the streets as deep and full as it runs through the veins of those who fight to preserve its history.

Thank you for West Philly, the home of so many who came in search of something better. Immigrants bringing their home across endless miles of land or open water with a silent confidence that turns whatever’s in the pot into something worth telling stories about.

And thank you for this, for one room, on one Sunday,
where we all came together, learned together, ate together, experienced together, and sat down together like it had all been planned before any of us were born.

A table set in advance by our ancestors.

Jollof beside Oxtail.
Shrimp beside Truffles.
Remnants of culture hiding in the corner of every pot,
patient, patient like the hands that raised the hands that taught us to raise ours.

Because that is who we really cooked for.

He stood behind a stove that was never his. Sweat equity pound of flesh by pound of flesh, in a kitchen that never called him chef. Laying plate upon plate on a table where he was never allowed to sit.

Hercules, this one is for you.

Pull up a chair. You’ve earned the seat. The whole diaspora came home to serve YOU.

That is the thing about food. It remembers. Today, it remembers you.

A day marking that you will never be forgotten within and through us and this experience. And this will not be the last time we bring up your name in reverence.

Chapter One: The Chefs [Part One]
A love letter to the Diaspora;

We have tasted you in a hundred different kitchens
and called it home every time.

You are grandmothers hands that never measured,
the pinches of seasoning from memory, oil singing in the pan like a Sunday Hymnal.

You crossed water you did not choose to cross,
carried in the body, in the tongue, in the recipe
that survived when so much else of you was not allowed to.

Thank you for Puerto Rico. Folded, Golden, Fresh, a feeling that can only come from an island full of love wrapped in inimitable culture.

Thank you for Ghana, patient, slow, taught by hands
that were taught by hands that were taught by hands,
going back further than any of us can count.

Thank you for Senegal, a vibrant, bold, diverse, feeding every mouth with hands that broke the shackles of French colonialism to create a cuisine so unique, yet so familiar to those who call West Africa home.

Thank you for Philadelphia too, a son’s love letter to not only the place he grew into the man he would become, but a new home to continue traditions & techniques thought lost in a new world.

Different water. Different grandmothers. Different Hands. So many threads to tell one singular story.

You were never scattered, Diaspora. You were planted.
And what grows from a plant, always finds its way back to the table.

That’s the thing about food. It doesn’t matter what ocean it crossed, or what language it lost, or what name it was given
by the people who didn’t understand what they were naming.

It remembers. It reminds. It brings us all to the table.
