NEW CHALLENGE
Some days only your favorite foods can make you feel better: Comfort Food.
It's whatever makes you feel nourished and happy. For many of us, it's the simple and filling home-cooked dishes we grew up on. Potatoes, rice, and pasta are all top contenders.

Just like for this month's judge Costas from @madebymrmillas
"Generally anything my mum makes I’d put in the comfort food category as there is so much nostalgia and so many good memories that go alongside these foods. I’m a big carb fan and won’t hear a bad word said about them! Haha! I love a big bowl of pasta with a rich sauce, a classic English roast beef dinner with roast potatoes, Yorkshire pudding and lashings of gravy or a warming curry piled onto rice with a torn up fluffy naan! And my absolute favourite, a hot pudding with custard! A big slice of cinnamon rich apple pie? Delicious!"

Also for me, anything that my mum @fug.ice cooks is comfort food since it always makes me feel warm and content. Like this Hungarian Jókai Bean Soup. A slowly cooked soup with smoked meat, beans, vegetables and 'csipetke' (a cross between a noodle and a dumpling).

Sharing WITH LOVE one of my favourite recipes: Chestnut Chocolate Truffles. Because you can not have enough chocolate recipes 😉

These truffles are delicious, decadent and yet easy to make. 😎 The recipe marries elegant chestnut puree with bitter dark chocolate.

INGREDIENTS
400 g chestnut puree with 20% sugar (you can also use pre-cooked, peeled, and vacuum-packaged chestnuts, but need to add extra sugar)
20 g dark chocolate, melted with
60 g butter
50 g ground shortbread biscuits (preferably low fat and neutral taste)
a small pinch of salt
1/4 tsp. of ground cinnamon
about 1/4 cup of dark cacao powder, for coating

INSTRUCTIONS
Combine all the ingredients in a blender or food processor.
Blend everything until completely combined.
Make small round balls out of it and roll them in unsweetened cocoa powder.

While preparing for the Food Art Project Photography Challenge, I was playing around with pumpkin seed oil vinaigrette - trying to capture 'liquid texture'.

After this extremely long greyish winter, I am longing for fresh, lively colors. No wonder I decided to explore the refreshing green color palette - featuring soft greens and a gentle yellow. (And also for practical reasons: I craved a Green Goddess salad, so I had lots of green ingredients at my hand 😅).

Green evokes the lively energy of new growth and and balance, promoting a sense of tranquility and harmony - something I am looking forward to this Spring. 🌱🍃🍀
