Blessed Francis Seelos was a Redemptorist Priest from Germany who lived and is buried here in New Orleans. He was known as the “Cheerful Ascetic” and would hear hours and hours of Confessions, greeting the local New Orleanians with mildness and a smile. This is a holy and miraculous place open to all to come pray and go to Mass in the Garden District!

Happy Monday in Louisiana, y’all! Here’s how to make Andre’s famous red beans and rice! 🫘🍚

Recipe:
1 lb of Camellia Red Beans (soaked overnight for best results)

Trinity, chopped:
1 onion
1 bell pepper
4 celery stalks
5 cloves of garlic (the Pope)

Sausage of choice— we used one link of turkey sausage and one link of Cajun sausage

1 lb meat of choice— we usually use ham hocks but this time we used turkey necks!

Sear all of the meats together in a pan and then cook your trinity in the left over oil and add butter and Slap Ya Mama!

Put all ingredients in your pot! Add 1 quart of water or chicken broth (we used water this time because we didn’t have chicken broth)

Season with:
Tony’s
Slap Ya Mama
Garlic powder
Onion powder
Cayenne pepper
White pepper
Parsley & Bay leaves

Bring to a boil, then cook on low for a few hours! The longer its goes, the better! About 20 minutes before serving, smush some red beans against the side of the pot and add a little bit of butter!

Serve over rice and enjoy!

DISCLAIMER: He would season EVERYTHING with Slap Ya Mama, but we were making it for my Mississippi fam, so we had to hold on the heat 🔥

5 cloves garlic, chopped
4 tablespoons butter
1 tablespoon tomato paste

Meats:
2 links sausage
1lb chicken thighs (seasoned with salt, pepper, onion powder, garlic powder, and Slap Ya Mama)
Seared in pan

1 large can cream of mushroom soup
4 cups chicken broth
1 tablespoon Better Than Bouillon
Louisiana hot sauce (to taste)
Worcestershire sauce (to taste)
3 Bay leaves
1 tablespooon parsley (optional)

Add 1 bag of your favorite pasta and a cup of water. Cook for 30 minutes or until all liquid is soaked up! Top your plate with Slap Ya Mama and Louisiana Hot Sauce for that extra heat then bon appetite 🍝
