Umewahi kula mihogo kwa mtindo wa Cuba? 🇨🇺
Leo tunatengeneza Yuca con Mojo, mihogo laini yenye sauce ya vitunguu saumu na lemon, tukiisindikiza na beef yenye viungo. Utajaribu hii combination?

🇨🇺 YUCA CON MOJO WITH SPICED BEEF

A Cuban-inspired way to elevate boiled cassava! Tender cassava tossed in a garlic, butter and lemon sauce, served with flavourful spiced beef.

INGREDIENTS

For the cassava

* Peeled cassava, with the tough centre removed
* Water, for boiling
* 1 beef stock cube

For the Mojo sauce

* Cooking oil
* Butter
* Garlic, minced
* Red onions, sliced
* Lemon juice
* Red bell pepper, chopped
* Red chilli, chopped
* Salt, to taste

For the spiced beef

* Beef, boiled until tender
* Cooking oil
* Ginger, minced
* Garlic, minced
* Onions, chopped
* Paprika
* Turmeric
* Curry powder
* Beef stock, as needed
* Oyster sauce
* Fresh coriander, chopped, for garnish

METHOD

1. Boil the cassava
Bring water to a boil and dissolve the beef stock cube. Add the peeled cassava and cook until tender. Drain and set aside.

2. Prepare the Mojo sauce
Heat cooking oil and butter in a pan over low heat. Add the garlic and sliced red onions, then cook gently. Add lemon juice, red bell pepper and red chilli. Season with salt and cook until fragrant.

3. Prepare the spiced beef
Heat oil in a pan. Add ginger and garlic and cook until fragrant. Add the onions and cook until softened. Stir in the paprika, turmeric and curry powder, allowing the spices to cook briefly.

Add a little beef stock to deglaze the pan, scraping up the flavourful bits. Stir in the oyster sauce, then add the pre-boiled beef and mix well until coated in the sauce. Garnish with fresh coriander.

4. Combine and serve
Place the boiled cassava in a large bowl. Pour over the Mojo sauce and toss gently until every piece is coated. Serve alongside the spiced beef and enjoy!

✨ Cooking tip: Cook the garlic over low heat to prevent it from burning, and add the lemon juice to balance the richness of the butter.

Save this recipe for your next kitchen adventure!

Leo nimeamua kujaribu kitu kipya jikoni! 🍊🍉

This is Mimax, Smart Living.

Shadiwala Red Chicken—rahisi, rich na tamu sana.

A beautifully spiced chicken marinated in a creamy cashew-almond-coconut blend, then slow-cooked in ghee until tender

INGREDIENTS

* Bone-in, skinless chicken, cut into pieces
* Cashew nuts
* Almonds
* Coconut flakes
* Plain yogurt
* Chilli sauce
* Soy sauce
* Ginger & garlic paste
* Cumin
* Curry powder
* Kashmiri chilli powder
* Turmeric
* Fresh coriander, chopped
* Green chillies, slit
* Fried onions
* Ghee
* Hot water
* Salt, to taste
* Naan, to serve

METHOD

1. Blend the cashews, almonds, coconut flakes and yogurt until smooth.
2. In a bowl, combine the blended nut mixture with chilli sauce, soy sauce, ginger-garlic, cumin, curry powder, Kashmiri chilli powder and turmeric. Mix until you have a rich red marinade.
3. Add the chicken and coat thoroughly. Add fresh coriander and slit green chillies, then mix well.
4. Cover and marinate for about 1 hour.
5. Mix in a handful of fried onions.
6. Heat ghee in a wide pan and add the marinated chicken. Cook on low heat, covered, for about 10 minutes, allowing the chicken to slowly cook in its marinade.
7. Give it a good mix, then add hot water to loosen the gravy. Cover and cook for another 5 minutes, or until the chicken is fully cooked and tender.
8. Finish with fresh coriander and green chillies. Serve hot with naan

Little tip: Kashmiri chilli powder gives you that gorgeous deep red colour without making the dish overwhelmingly spicy
