What’s better than one soy sauce? Two soy sauces! Nail the 2:1 ratio with @lkkeurope. Mix 2 parts light soy sauce with 1 part dark soy sauce to get that perfect balance of savoury umami. I ❤️ Beef ho fun noodles 乾炒牛河 it showcases the soy sauce combo beautifully. The sauce clings to each strand and it’s one of my favourite dishes to order when having dim sum or cooking a weeknight dinner. #ad

Find Lee Kum Kee at Ocado, Sainsbury’s, Tesco and most Asian supermarkets

Ingredients
140g thinly sliced beef (flank, skirt or bavette)
1 tsp light soy sauce
1 tsp Shaoxing wine
1 tsp cornflour
½ tsp baking soda
1 tbsp water
¼ tsp white pepper
Pinch of sugar
1 tsp oil
1 packet fresh ho fun noodles
2-3 tbsp neutral oil
60g bean sprouts
½ onion, sliced
Chinese chives or spring onions, cut into sticks

Sauce
2 tbsp light soy sauce
1 tbsp dark soy sauce
¼ tbsp oyster sauce
1 tsp sesame oil

Method
Marinate beef with soy sauce, Shaoxing wine, cornflour, baking soda, water, pepper, sugar and oil. Set aside.
Separate noodles and mix the sauce ingredients together.
Heat a wok until smoking hot. Add oil and stir-fry beef for 40-60 seconds until just coloured. Remove.
Add noodles to the wok and stir-fry, then add bean sprouts, onion and chives. Cook for another 30-45 seconds.
Return beef to the wok, add sauce and stir-fry for another minute. Finish with sesame oil and serve immediately. by @angelahuii

Happy Gathering in Cardiff is my mecca (but real ones know it’s now migrated to Good World above the casino), but in its heyday happy g was the place to be. I’m level 99 at bamboo steamer basket Tetris and prawn cheung fun FC til I die. 🇬🇷 48 hours in Athens 🇬🇷 tysm for the mega map recs @panayiotasoutis and for the gorj press stay @okupa.athens ! 

Ate my bodyweight in feta salad, dipped alllll the dips (tzatziki, taramasalata and fava in that order not taking further questions), a spanakopita a day keeps the doctor away and freddos are my personality now.

Realised I haven’t posted anything on the grid properly in over three months whoooooops soz. Got burned out af from always doing too much and needed some sun so booked a solo trip to Gran Canaria in march actually left the laptop at home for once (who is she??) but ended up frantically typing a last-minute article on the phone while waiting to board flight (can’t stop won’t stop #girlboss). First few days without laptop felt like someone had amputated my arm off and I genuinely didn’t know what to do with myself with all this spare time like a sim standing motionless waiting on instructions. Slowly eased myself back into it with hikes in the dunes, destroying laps in the hotel pool every morning and throwing myself in any body of water. Turns out the cure to burn out is the mental arithmetic of figuring out how much to order when dining solo in a restaurant then when you realise you’ve ordered too much you eat the whole thing anyway to prove waiters wrong, read some good books, eat a new piece of tropical fruit a day, nurse your Fanta limon addiction with every meal, look at cool brutalist buildings, eat a Gilda a day, admire the tower of jamon ruffles in supermarkets and find a silly toilet table when you’re trying to pee taken in Gran Canaria by @angelahuii

Wrote today’s @obsmagazine @obsfood cover for the noooooodle issue 🍜 hand-pulled and oil-slicked, soba, udon, ho fun, pho, laksa… we all can’t get enough of the noodle’s addictive slurp factor. I’ve long been fascinated with the history of noodles and its stratospheric rise in the UK. How we went from Chinese takeaway chow mein to the pivotal Wagamama, which introduced so many to Japanese-ish food for the first time — trying yakisoba, katsu curry and ramen — and a new casual way of dining. That, in turn, paved the way for the 2010 ramen wave that had us all queuing for @shoryu_ramen @bonedaddies @kanada_ya_ldn @ippudolondon. Today, there seems to be a new noodle bar opening every day, like @hoko.london, the mega-viral @noodleinnuk_ and @khaosoi.ldn selling hundreds of bowls daily, the longstanding @koyalondon with @shukooda sharing her longevity insights, and the biang biang boom spearheaded by @guirongwei @master.wei.3150 @dreamxianec3r. It’s not just London that’s gone loopy for noodles. @zaap_thai_streetfood has cornered the northern market and @thedumplingtree is the first Yunnan restaurant in Oxford. Plus, noodles around the world, some of the best places to eat noodles in the UK and noodle recipes by @fuchsiadunlop @emikodavies @tonytan53. “In the ever-evolving landscape of British grocery culture over the last decade, Asian supermarkets have undergone a remarkable transformation. Previously, supermarkets like SeeWoo and Wing Yip were anchored in ethnically diverse suburbs and Chinatowns. Their modest storefronts hid their true importance: in addition to being lifelines for families seeking a taste of home, they also propped up the entire immigrant-owned hospitality trade, providing the essential and hard-to-find ingredients which are needed to cook and survive.

​​Today, Asian convenience stores and supermarkets have reshaped British eating habits, becoming a nationwide cultural phenomenon. Even major UK supermarkets have caught on: their outdated ‘oriental’ aisles, once full of novelty items, now stock products that have infiltrated nearly every kitchen in the country. The newer Asian supermarkets – the ones with in-store noodle pit stops and friends-only WeChat groups for exclusive deals – are great, but for many people, stepping into older stores like Wing Yip feels like something more than a shopping trip. You can easily lose hours of your life amid the narrow aisles pulsing with Aaron Kwok’s Cantopop hits, fighting Asian aunties over the freshest bunches of morning glory or marvelling at the live fish tanks as if in an aquarium.

These stores have been there for us when we need them, providing a tangible link to our past as well as an education about new ingredients that can rekindle connections to our cultural roots. They’re sanctuaries for people who don’t quite feel like they belong, or for those who want to top up their Asianness. Accessible, affordable, warm and welcoming, they also now come with the latest stupid Buldak ramen flavour as seen on TikTok.“

Chinatowns are dying. Or, at least, some version of them are. Some, like Liverpool’s, have been in decline since the pandemic; others, like London’s, have lost their unique Cantonese character. At the same time, as Chinese culture spreads across the UK, many cities and university towns – Sheffield, Coventry, Nottingham, Bristol, Southampton, Exeter – now have strong restaurant scenes fuelled by the increase in Chinese students, some of which can arguably be called new ‘unofficial’ Chinatowns. Everything about these spaces is contested – who they’re for, their relationship to Chineseness, even whether they can be called Chinatowns at all – but there is one common thread: the food.

In this ten part guide to Chinatowns, guest edited by @angelahuii, we examine Chinatowns across the UK: how and why they’re changing, who they’re for, and how they have shaped and continue to shape the way we eat. The guides not only take in the historical Chinatowns of London, Liverpool, Manchester and Birmingham, but also the new Chinatowns of London in Bloomsbury, King’s Cross, the Docklands, Spitalfields and Colindale, along with the Chinese restaurant scenes of Cambridge, Glasgow, Sheffield, Edinburgh, Oxford, Bristol, and Newcastle. There isn’t a better resource on where to eat in the UK’s Chinatowns than this.

hoo boy 2025. what. a. year, huh? the entire year felt like it was in one long retrograde. A rough one from multiple perspectives, losing clients, making mistakes, cutting people that don’t serve me anymore and some awful news from loved ones that made me really reevaluate what’s important in life, who’s deserving of my time and question my intent, purpose and output. I guess the good news with adversity is that it comes with a lot of self reflection and slowing down or forced rest in my case. This year I felt I was constantly treading water, not able to catch a break and at some points felt like I was drowning. A rigged year for sure and everything felt like it was a write off, but looking back there have been some damn good moments too. I’ve been lucky enough to be on the move a lot, travelled to some unreal places for work and play, met some wonderful new faces, hugged loved ones even tighter, cooked my first supper club with my mam, volunteered, loved myself more and really invested in skincare and fitness. I worked on many firsts in radio and tv, spoke at some incredible events and festivals, scored some dream bylines and went back to hospitality because I miss the gratification from customers, being creative with hands and seeing progress in real time. One of the biggest joys has been tutoring @angeryspice with @johnschofieldtrust it’s been amazing to see an aspiring journalist grow, develop their confidence and re-examine my practices in a way that’s given this old jaded writer fire in my belly again. It’s been a period of learning to prepare me for what’s coming. The wise @simranhans said to me who are you comparing yourself to? Not everything has to be an upward trajectory and her words shook me out of my funk. I’m constantly trying to better myself. I’m my own biggest critic and I’m trying to rewire my brain that it’s okay to have a fallow year. A year of fuck it, at least you tried, so roll with it. As we head into the new year, I’m wishing for more stability, more learning, more self-love and more silliness. More, more, more! how do you like it!
