At Amaya, the food doesn’t arrive loudly — it unfolds.
Smoke, spice, texture, restraint. Every plate feels considered without
trying too hard, which is rarer than people think.
The grill does most of the talking here, and honestly, it should. A

From the vibrant streets of Banaras to the serene valleys of Kashmir, the bold spices of Maharashtra to the coastal delights of South India-each course was a masterpiece, blending tradition with modern techniques.
And to end on the sweetest note, a decadent Delhi 6 Serenade-milk almond tart (Dhoda Tart) with gold leaf and vanilla bean ice cream, accompanied by exquisite petit fours ( sweet boondi Macaroons & fennel seed dark chocolate—an innovative twist on the classic mouth freshener).. inspired by Delhi’s rich culinary heritage!
