I'm happy with my company name.

Established as an LLC in Morocco In Sept 2025.

It will represent the software end of high volume kitchen management.

Kinda tried learning Moroccan Arabic and french which I am comfortable In when it comes to basic conversations.

But from this point on I will only be speaking American when dealing with businesses here.

Lots of sketchyness. Hence the super strict auditing loss prévention software that catches "anomalies" live in action

The fam still has a lot of old school dark room equipment that is now on my lists of thing to save and put in my new home here.

A rowing machine will make it's debut in the new pad.

I am fairly happy in Morocco.

I always prefer the white plate over any sort of whacky colored plate.

Graffit in the upper west side used to have nice plates for their menus.

Most often the price of the plate is higher than the cost of the items in it.

Wrapping up translating 25 years of work in English and Fahrenheit and Miles and pounds to French and Moroccan Arabic in Celsius, kilometers and kilos.

Hella weird adjustments to have to add to regular adjustments.

Like back in 2014-2015-2016-2017. A golden Instagram era where managing 4 Instagram accounts in a small food company was done by a team of 2 to 3 people just to photograph the food.

Good news. I'm back to cooking in a space that allows me to setup a professional food photo studio for my dishes.

Might have to launch a trilingual food channel with occasional guitar solos by the chef and some #schmups speedruns.

Most important thing. I'm healthy. I'm with the family which I haven't seen in a couple decades, putting together another great work machine that stays profitable in another country in 2 new languages. It has been done in 3 years.

It's going to be funny for my American friends watching my Arabic or Fr nch videos.

None of my American friends ever heard me speak another language other than New York English.

I am debating on opening a restaurant called Catastrophe in Morocco.

I think it's a funny name if the food is actually really good at catastrophe.
