Pretty wild when I think about the ride that’s been the last ten-plus years.

We talk a lot about the hardships of this industry. The grind is relentless, that’s for sure. So when you get a moment to stop and really soak in the good ones, you have to.

Last week, we had the opportunity to travel to Park City, Utah, for the first Chef’s Table Festival. We were incredibly honored to cook alongside some of the best chefs in the world and, more importantly, to share the story of Ariete, Miami, and what it means to us to be Cuban American.

I think I’m still unpacking all of the thoughts, emotions, and feelings from the week. What it meant to be there. The conversations we had. The people we met. And just how far this little restaurant and this team have come.

But I can share this: I’m incredibly proud. Proud of our team, proud of where we come from, and grateful that after all these years we still get opportunities to tell our story through food.

. But the job’s not finished.

We’re thrilled to be part of this year’s Chef’s Table Festival (@chefstableofficial) in Park City, Utah from August 13–16. We’ll be bringing dishes from both Ariete (@arietemiami) and Chug’s Diner (@chugsdiner) to share a taste of Miami with an incredible community of chefs and food lovers. Looking forward to great company, amazing food, and the energy of a festival that celebrates everything we love about this industry. See you there! taken in Ariete by @arietemiami

Thank you to everyone who joined us at Ariete for an evening dedicated to those who make Miami’s culinary community so special.

We spend so much time focused on the noise, press, media, the endless demands of the industry, that we often forget to pause and celebrate each other. This night wasn’t about any of that. It was about us. A small group of humans who chose to swim against the current, show up, create, and push our city forward.

Thank you for your work. Thank you for sharing your talent. Thank you for sharing a piece of your story. Thank you for helping keep Miami special.

Be disruptive.
Be unique.
Be yourself.

Those three ideas embody the spirit of Miami hospitality.

Relentless and unapologetically stubborn, our community has spent years grinding to shed the stereotypes so often attached to our city. In the process, we don’t always stop to appreciate just how far we’ve come.

That’s what made Chefs Night so special.

To see legends of our industry sitting beside chefs who may have opened their first restaurant only a year or two ago was a powerful reminder of what this community is all about. The room felt alive—filled with conversations, ideas, old friendships, new relationships, and a genuine excitement for what we’re all building together. For one evening, the hospitality we dedicate to our guests was extended to one another. It felt genuine, inspiring, and like the beginning of something that will leave a lasting impact on all of us.

The next Chefs Night will be in February, and you already know what time it is. Our goal is to welcome chefs from all over the country and continue building something that puts Miami’s hospitality community exactly where it belongs—at the center of the conversation.

Let’s keep grinding. taken in Ariete by @arietemiami

When @arietemiami opened ten years ago I renvisioned a preserved fish dish I grew up that my abuelo made pretty often. I wanted something delicious, rich and fullfilling for a snack. That ended up being the version one of tuna Conserva. That recipe is still available at the bar as a snack but we love the flavors so much we wanted to take those key flavors and renvsion them to a lighter and cleaner crudo presentation. That’s how we landed with the current version we have that’s on our menu. This dish is both subtle & bold. Light but yet rich, this dish is a great reflection of what Ariete stands for and it makes sense the author of this dish was @meme_1016 & @m4oncs .

We kicked off June with our participation in the 39th Annual Chefs’ Tribute to Citymeals on Wheels at Cipriani South Street. Our team was honored to represent Ariete and share our Caviar Pastelito with fellow chefs and guests who came together for an incredible cause.

The evening raised nearly $1 million, helping deliver 100,000 meals to older New Yorkers in need. We are deeply grateful to have been invited to take part in this initiative alongside so many talented chefs and industry peers.

Food has always been about more than what’s on the plate. It’s about community, care, and connection. We’re proud to have contributed to that mission.

5 years.

5 teams.

5 stars.

5 bibbs.

I have to pinch myself when I think about this journey, all ten years and the last five especially. Coming out of the pressure cooker that was 2020 into so much unknown we made a decision to swing as hard as we could food wise, be louder than we had ever been, stubborn, bullish, all the words. The reality is it took us five years to find our footing and mission and through all that adversity we decided there was no way we could let ourselves fail. The beauty of this industry lies within the humans that do it, all different walks of life, diffrent stories, journeys, cultures.

We may be a restaurant that’s inspired by my Cuban heritage. Labeled as Cuban American , American Cuban.. using classical French techniques of execution ( I’ll let all of you guys duke out what that statement means ) the reality is Ariete and chugs stand for so much more

We have

Venezuelans
Haitians
Mexicans by way of Michigan
Cubans by way of Hialeah
Indian
Irish
Americans
Canadians
French
Even have a few Brits on our team and I’m sure im missing a few.

The goals are the same, we love what we do and we love who we do it with. We are honored to be where we are and even moreso to share this moment with our teammates and our city. It has taken all of us to do this thing. The village.

No words can explain how grateful I am for my team, my family and my city. The support and love we feel everyday is what makes this journey all worthwhile.

We are humbled as we are every year to retain our ⭐️ and Bibb by @michelinguide

It seems popular now even though when we started they snickered at the idea.

@arietemiami has always has a mantra, what would Cuban food be like if the country had never been halted in progress. What if we were free to be creative. That being said. We have been relentless and even when we were told Cuban food or Cuban American food could never elevate to be any more than what it was. We stayed the course, even before it was cool.
