My experimental lunch. .

This creative #vegan and #glutenfree plant-based zucchini crust is simply appetising and easy to put together. .
.
The crust is composed of chickpea flour, rice flour, grated courgette, apple cider vinegar, dried herbs, dried garlic, pepper and a pinch of salt. .
.
I topped the crust with my homemade roasted pepper sauce (roasted peppers, garlic and tamari), roasted tomatoes, blanched kale and asparagus.
.Organic vegetables sourced from local farmers. .

These #glutenfree #vegan mini tartlets layered with homemade haskap compote with a dash of cinnamon, date sugar and vanilla. Dressed with #fermented cashew cream, dried rose petals, freshly ground vanilla pods, and edible gold specks. .

Experimenting with #vegan #glutenfree pizza base. I think I nailed it with a combo of grated courgette, corn flour, chickpea flour, rice flour, little mix of chia seeds and psyllium powder (binder), kefir water, and spices. Topped with homemade red wine tomato sauce, seasonal vegetables like fresh asparagus, fresh herbs, and fermented cashew cheese. .
