We’ve been lucky to meet so many fellow travellers on the road, so it’s about time we properly introduced ourselves.

I’m Emma, sharing our adventures with my partner of 7+ years, Austen, and our very important and very fluffy third wheel, Sherman the labradoodle.

We hit the road in January 2025, exploring TAS, NSW, QLD, and now the NT. We’re exploring Australia in our LandCruiser and sleeping in a Tvan that Austen spent way too much time setting up pre-trip.

I work full-time in digital marketing, remotely from wherever we park, and Austen, normally a plumber, is taking some time off while we travel, picking up work along the way as opportunities come up.

Originally from Victoria, Austen from Gippsland and Emma from Melbourne, we can’t wait to keep sharing our adventures, the chaos, and everything in between.

Raspberry Crumpets Cooked in the Outback 🤤

These were such a fun camp breakfast! We added frozen raspberries and they were incredible, but if you're into a more traditional option, you can leave them out and make plain crumpets instead.

Ingredients:

* 1 cup plain flour
* 250ml warm water
* ½ tsp salt
* ½ tsp white sugar
* 1 tsp baking powder
* 1 tsp instant yeast
* 1 tbsp warm water (for the yeast)
* Frozen raspberries or your favourite frozen berries (optional)
* Butter, for cooking

Method:

1. Place the flour, 250ml warm water and salt in a bowl and whisk for 2 minutes (we just used a fork!).
2. In a small bowl, dissolve the yeast in 1 tbsp warm water.
3. Add the yeast mixture, sugar and baking powder to the batter and whisk for another 30 seconds.
4. Cover with a clean tea towel and leave somewhere warm for 15-30 minutes until the surface becomes nice and foamy. (We popped ours in the tent!)
5. Gently fold through the frozen raspberries if you're using them.
6. Grease your pan and egg rings with butter and heat over medium-high.
7. Fill the egg rings with batter and cook until bubbles form around the edges and begin appearing in the centre.
8. Reduce the heat to medium-low and continue cooking until the bubbles have popped and the top looks set. (You can help things along by popping any stubborn bubbles with a skewer.)
9. Flip for around 15 seconds just to lightly colour the top.

Let them cool on a rack, then toast them just like you would a store-bought crumpet.

We served ours with plenty of butter and some delicious local honey from @ord.river.raw.honey 🍯

Have you ever heard of this hidden gem in the very popular Litchfield National Park? Central Valley Campgrounds!! There are three, and we chose number 2.
Each campground has its own private swimming holes, only accessible if you are staying there. We got the place all to ourselves when we visited in September, and it was seriously amazing! We absolutely loved our time in Exmouth, and yes, we know there is SO much more to see and do around the Ningaloo Coast!

Our highlights:

𖤓 sunset at Charles Knife Canyon
𖤓 Snorkelling & SUPing at Turquoise Bay
𖤓 Swimming with whale sharks with @ningaloodiscovery 

We were travelling with family and our dog Sherman, so we did have a few restrictions on where we could go. A lot of the beaches with fringing reefs are within Cape Range National Park, where dogs aren’t allowed, so we just did our best to make the most of the places we could visit together.

This definitely isn’t everything Exmouth has to offer, but here’s everything we managed to get up to while we were there.

We joined Jurien Bay Oceanic Experience for a morning exploring the islands and waters around Jurien Bay, learning all about the sea lions and the marine environment from the experienced team of divers and marine biologists.

Australian sea lions are endemic to Australia and are listed as endangered, with fewer than 12,000 estimated to remain in the wild.

We were lucky enough to see sea lions both in the water and around the islands, although they were keeping their distance, so we didn’t get the super close-up interactions we were hoping for that they usually get.

But that's part of experiencing wildlife in its natural environment. You never know exactly what you're going to see or how the animals will behave, and we actually loved that the experience focused so much on conservation and education.

Jurien Bay Marine Park is home to an important breeding area for Australian sea lions, making this a pretty special part of the country to experience them.

Even on a quieter day, it was an incredible morning on the water and gave us an even greater appreciation for these animals and the importance of protecting them.

Thanks to the team at Jurien Bay Oceanic Experience for taking us out and sharing so much of your knowledge with us. 🦭

Mexican camp cook up 🌮

Grilled chicken quesadillas and loaded nachos, with a fresh salsa and guacamole to bring it all together. What more could you want?

Ingredients:

• Mission Extra Soft Original Tortillas
• Mission White Corn Tortilla Strips
• Chicken thighs
• Taco seasoning
• Red & green capsicum
• Brown onion
• Grated cheese
• Tomato
• Red onion
• Cucumber
• Red chilli
• Jalapeños
• Fresh coriander
• Avocado
• Fresh lime
• Salt & pepper
• Sour cream

Method:

1. Season the chicken thighs with taco seasoning and grill until cooked through. Slice once cooked.
2. Slice the capsicum and brown onion, season with taco seasoning and cook until soft and slightly charred.
3. Make the fresh salsa by chopping the tomato, red onion, cucumber, chilli, jalapeño and coriander, then mixing with fresh lime juice and zest.
4. Mash the avocado with lime juice, salt and pepper to make the guacamole.
5. Mix the grilled chicken with the cooked capsicum and onion, then add to Mission Extra Soft Original Tortillas with plenty of cheese. Fold and grill until golden and crispy.
6. For the nachos, layer Mission White Corn Tortilla Strips with cheese and bake until melted. Top with the remaining chicken mixture, fresh salsa, guacamole, jalapeños and sour cream.

Two Mexican favourites, one very yummy camp dinner.

Hutt Lagoon, also known as Pink Lake, is one of those places that looks almost too unreal to be true. The colour can be absolutely wild, and seeing that bright pink stretch of water against the surrounding landscape is pretty hard to wrap your head around.

If you’re travelling along the Coral Coast, make sure you stop and have a look for yourself. It’s one of those spots that photos really don’t do justice.

Aussie’s Chunky beef cottage pie, made in one pot (which means less washing up!) 🥩

This one takes a little longer, but most of it is just letting the beef simmer away until it’s fall-apart tender.

Ingredients:

• 1kg chuck steak, cut into chunks
• 1 onion, 1 carrot & 2 sticks celery
• 4 cloves garlic
• Tomato paste
• 1 cup corn & 1 cup frozen peas
• 2 cups red wine & 2 cups water
• 2 tsp beef stock
• Worcestershire sauce
• 2 bay leaves & fresh thyme
• 750g potatoes
• 150g butter & ½ cup milk
• Flour or cornflour, to thicken
• Panko crumbs & parmesan
• Olive oil, parsley, salt & pepper

Method:

1. Season and brown the beef in olive oil. Remove from the pot.
2. Cook the onion, carrot, celery and garlic until softened, then stir through the tomato paste.
3. Add the beef, red wine, water, beef stock, Worcestershire sauce, bay leaves and thyme.
4. Cover and simmer for around 2 hours, until the beef is fall-apart tender.
5. Stir through the corn and peas and thicken the sauce.
6. Boil and mash the potatoes with butter, milk, salt and pepper.
7. Top the beef with the mash, then sprinkle with panko crumbs and parmesan.
8. Bake until golden and crispy, then finish with fresh parsley.

One pot, a bit of time and a very hearty camp dinner. Easily serves 6 people!

We will never get over the emus at Monkey Mia 😂

They have absolutely no fear and 100% will steal a bag of chips out of your car, and probably walk straight into your tent if you leave the door open.

Honestly, these guys just do whatever they want around here.

This might be one of the most perfect little campsites we’ve stayed at.

Fowlers Campground is a small, dog-friendly campground right by the beach in Shark Bay, with camps spread out through the coastal scrub.

We somehow had the whole bay to ourselves, and the conditions couldn’t have been better. No wind, calm, shallow water and so much to see from the SUP. We spotted rays, reef sharks and fish jumping out of the water while we cruised around the bay.

You can only stay for one night, but honestly, that one night was pretty perfect.

If you’re travelling through Shark Bay, add Fowlers Camp to your list.
