POSTS STORIES REELS

From Australian sheep farms to the kitchen, our UK Lambassadors had an incredible time on the 2026 Lambassador Tour.

Chef @Tomcook1976, Culinary Director at @Sandwollensky and @chefLaraNorman, founder of catering and events company @Euphoriabylaranorman, travelled across Australia, meeting sheep producers, learning more about how Australian lamb is raised and experiencing the people and expertise behind the product.

With farm visits, butchery demonstrations and culinary experiences along the way, the tour gave both chefs a deeper insight into the story of Australian lamb and gave them plenty of inspiration to take back to their own kitchens.

How well do you know the beef heel?

Breaking it down into its individual muscles can help chefs and foodservice teams get more from the cut, improve consistency and uncover new menu possibilities.

In this video, Aussie Meat Academy breaks down the beef heel muscle, showing how it can be prepared and where each muscle can be used.

A useful watch for chefs, butchers and foodservice professionals looking to sharpen their butchery knowledge and make the most of every cut.

From lush green pastures to healthy, well-cared-for livestock, the Australian landscape plays an important role in producing quality beef and lamb.

Across Australia, producers work closely with the land, carefully managing pastures and natural resources while prioritising animal welfare.

It’s a balance of land, livestock and care that underpins the Australian red meat story.

From a beautifully seared wagyu fillet to slow-roasted lamb, Australian beef and lamb brings depth of flavour, tenderness and versatility to the plate.

It works just as well in a refined tasting menu as it does tucked into a toasted sandwich or stacked into a burger.

Different cuts. Different cooking styles. The same exceptional quality.

At our Australian Wagyu Masterclass at King Street Townhouse in Manchester this month, chef and Aussie Beef Mate @chef_braydendavies of @boxtreerestaurant and @kingsttownhouse Executive Chef @thejameshulme put Aussie Wagyu to the test across a menu designed to showcase the versatility of different cuts.

From bavette tartare to grilled tomahawk and tenderloin Wellington, each dish highlighted a different aspect of the beef, from its texture and marbling to its depth of flavour.

The qualities of Australian Wagyu are rooted in its genetics, with breeding influencing marbling and contributing to the tenderness, juiciness and rich, buttery flavour the beef is known for.

For chefs and foodservice professionals, understanding these characteristics helps inform cut selection and cooking methods to get the best from the product.

It really was a true showcase of Australian Wagyu’s quality, flavour and versatility in the hands of skilled chefs.

20 food professionals. One week in Australia. A serious amount of incredible beef and lamb.

During the recent Aussie Beef Mates Tour, chefs had the chance to cook with Australian red meat in the places where it begins, creating dish after dish that showcased the quality, flavour and consistency of the product.

From beautifully grilled steaks to creative plates that let the meat speak for itself, every meal was a chance to see what Australian beef and lamb can deliver in the kitchen.

It’s not just about how it looks on the plate. Consistent quality gives chefs the confidence to deliver great results, time after time.

And judging by these pictures, they certainly made the most of it.

During the recent Aussie Beef & Lamb Mates Tour, Cristian Bravaccini, Executive Head Chef for @azumirestaurantgroup, visited a wagyu farm and got a first-hand look at what goes into producing Australian wagyu.

What stood out to him was the way Australian farmers combine traditional care with technology. They’re not just farmers. They’re using data, technology and smart farming practices to understand their cattle, improve yield and quality and make sure their stock is well cared for.

Watch Cristian share what impressed him most about Australian farming.

What does a more sustainable future for red meat look like? It’s a conversation that starts on the farm and continues all the way to the kitchen.

That’s why Aussie Beef & Lamb is proud to support @craftguildofchefs’ National Chef of the Year alongside @anguspurebeef, connecting Australian red meat with some of the UK’s most talented chefs.

This year’s theme, Our Sustainable Future, puts sustainability, provenance and the choices made in the kitchen firmly on the agenda.

Across Australia, red meat producers are focused on how they manage land and resources, animal welfare and production practices to support the long-term future of the industry.

Supporting the next generation of chefs is about more than great food. It’s an opportunity to encourage meaningful conversations about where ingredients come from, how they’re produced and the future of the food industry.

What makes Australian Wagyu so distinctive?

Yesterday’s Australian Wagyu Masterclass in Manchester got right under the skin of it, giving chefs and foodservice professionals the chance to learn about the genetics and provenance behind the product, as well as what those characteristics mean in the kitchen.

Master Butcher @simonthebutch led a live butchery demonstration, breaking down different cuts and sharing practical insight into how to get the best from each one.

Then @chef_braydendavies of @boxtreerestaurant and @kingsttownhouse Executive Chef @thejameshulme showcased the beef in a four-hands menu, including:

- Tartare of bavette
- Thyme-crusted tenderloin
- Crispy jerk beef salad
- Grilled tomahawk
- Tenderloin Wellington

It was an afternoon combining the why behind the product with the how in the kitchen, giving chefs and foodservice professionals the chance to understand Australian Wagyu, how to work with it and, most importantly, taste it for themselves.
