Gatherings at austa...

...the 'I do's' in the fruit orchard, the elopements under the olive tree, garden-infused cocktails and canapés in the veggie patch at golden hour, before sitting for dinner on long tables under the pergolas, surrounded by nature and your nearest and dearest.

Our hosts who trusted us with their special moments have welcomed and immersed their guests into a world of local, Algarvian traditions, sharing plates filled with seasonal ingredients sourced from producers that we feel proud to talk about and our own farm.

They've hosted intimate love stories of 30 people, larger feasts and seated get togethers for up to 80, as well as fun and immersive receptions. Up to 150 smiling faces mingling in the courtyard for snacks and bigger bites, popping bottles of bio-dynamic wines into the night.

We can host both on site and cater at locations of your choice on request - and are now taking applications for 2027, so pop us your ideas to eat@austa.pt 🤍 by @austa_resta

As September draws to a close, we’ll press pause on daytimes at austa as the rhythm shifts and we move into the slower season here in Algarve.

From here, less actually means more, as we turn our attention towards the still-balmy evenings and delights of dinner, while also making space to experiment with new ideas. Behind the scenes we're already planting the autumn garden, plotting and looking forward to a new season of four-hands dinners, field trips, collaborations and, of course (especially for those still seeking to join us during daylight hour) our much-loved sell-out pop-up bakeries, with fresh pastries and cosy coffee.

Thank you to all who came for the hot and hazy, lazy lunches, quick bites and summer sip sessions over the last month's. For now, we’ll see you again as the sun goes down and for the special events that connect us even closer to the land and the people and producers that make our place.

Tell me you're in Algarve without telling me...

A warming, hearty rice dish is, of course, a staple for any tummy seeking the full Portuguese experience. At austa we use a heritage variety from the Mondego river, Galeirão rice, and stuff it with blue lobster from Sagres fat juicy mussels, Quarteira cuttlefish and sweet gamba da costa - pulled together with a fresh tomato and onion broth, a touch of orchard lemon and coriander (obvi), before folding through with a dollop of butter made with the juice from the heads of the shrimps.

Recent arrivals to the austa kitchen this week...

...with a very busy chef @beatrizolivenca leading the peixaria!

At austa we've been experimenting more with dry-aging, bringing maximum succulence and flavour concentration, a firm, flaky silkiness and a beautifully intense umami. On the skin we get a much more delicious browning and crispiness.

Too on the counter, delicate gamba da costa from Vila Real Santo António, and juicy blue lobsters from Sagres.

Dry-aged Mirandesa beef tartare, smoked mayo and chive on a seaweed and corn crisp - a dollop of @riofriocaviar from Granada for good measure.

Because wtf is water...?

If you're in you're 'non-alc-era' and haven't tucked into our sober sips list then, yeah, we're just going to say it, you don't know what you're missing.

Forget cringy 'mock-tails' filled with fake flavour and zero gastronomic structure, and say hey to these fermented fiestas, botanical beauties by the bottle which pair pretty damn perfectly with food.

Pick from an effervescent white tea with fermented honey and sage to toast a special occasion, juniper with bright botanicals, melon, szechuan pepper and citrus with a mineral finish or an earthy pu-erh with ginger, spice and savoury depth.

This is what to drink if you don't want to drink this September.
