Designhotels in Südtirol. Alto Adige, wie es auf den Ortsschildern steht. Zwei Sprachen, eine Region, und Hotels, die für uns alle etwas Besonderes sind.⁠

Ein Laubenhaus von 1450 in Brixen, heute mit 9 Suiten. Ein kreisrunder Neubau im Ahrntal, energieautark. Lodges mit eigenem Spa-Garten zwischen Bio-Apfelgärten im Vinschgau. Eine Whisky-Sauna in Abtei. Ein Designhotel mit Dachterrasse über Kaltern. Altes Gemäuer neben Neubau, Rundbögen neben Terrazzo, Lärchenholz neben schwarzem Holz. Kein Haus gleicht dem anderen.⁠

STUNNING setting. inside the gorgeous @badiahill hotel, with modern glass interiors overlooking the Dolomites 🏔️

we tried a mix of dishes from the 3 and 5-course menus. my highlights:

the small bites had some incredible flavours and textures - especially a mushroom-shaped bite with a super umami, almost mousse-like centre that just melted in your mouth 🤩

the smoked eel ravioli were sooo good - easily one of the standouts

my first time trying Glacier 51 toothfish and wow 🤯 super buttery and almost reminiscent of black cod, paired perfectly with the pancetta and vinous foam

the wagyu was the only miss for us: slightly tough and lacking the depth of flavour we expected

finished with petit fours out on the terrace - still thinking about the dulce de leche slice, and the chocolate pralines with different fillings were a fun closing touch 🤍

TLDR: really creative cooking from a young chef who’s clearly passionate about what he does. service could definitely be more polished, but the food and setting are well worth the visit 💫

Wagyu Südtirol: un progetto del ristorante stellato Porcino, a Badia, e dello chef Marco Verginer, nato per valorizzare la carne in ogni sua parte.

Il Wagyu viene raccontato attraverso tre portate: controfiletto, tartare e costine.

Non solo i tagli più pregiati: anche i ritagli e le carcasse vengono utilizzati per preparare un brodo intenso e saporito, arricchito con erbe aromatiche.

Un lavoro sulla materia prima che parte dal rispetto dell’animale e dalla volontà di utilizzare e valorizzare ogni parte, riducendo al minimo gli sprechi.
