Double birthday celebrations this week, so a great excuse to bake some cake and try out a new recipe - thank you @bakedbybenji

This bake was two chocolate sponges layered between a mascarpone vanilla filling and a spice blackberry orange compote; and generously smothered with a rich fudge chocolate frosting. Garnished with fresh blackberries, rosemary sprigs and shaved dark chocolate. Pretty pleased with the end result and flavours. Will definitely be making this one again. Perhaps a 🍒 cherry version? 🤔

Call me nostalgic, the classic pineapple upside-down cake brings back many fond childhood memories. One in particular, is my mum baking this for a Melbourne Cup lunch with her friends. Being the super generous mum she is, she baked an extra one for us kids to enjoy! 🥰❤️🥰❤️
Juicy pineapple slices, dotted with cherries in a sweet brown sugar caramel glaze, over a moist butter cake. What’s not to love? The fact we can eat our fruit serving in cake form, win! 😁

There are macarons, and then there are Pierre Hermé macarons. It’s not hard to see why he’s considered the “Picasso of Pastry”… it’s all about the unexpected harmony of ingredients. My sister returned from Paris with the holy grail of treats: the legendary Ispahan (that perfect marriage of rose, lychee, and raspberry) and Mogador (the iconic blend of milk chocolate and passion fruit). I’m reminded that some things really are worth the hype. A total masterclass in flavour engineering. 🇫🇷✨

I devoured the Baja Style Tacos - that crispy tempura cod paired with the avocado, aioli, lime, and pico was a flavour explosion! And the Pea Puree Arancini with the tomato butter and lime aioli? Unexpectedly delicious! You HAVE to try them. by @bakedbyranj
