Happy Thanksgiving! 🍂

Today we give thanks to God for all the blessings. With much affection, I remember Chef’s Table, part of season five on Netflix, directed by @brimcgi ❤️🙏. It’s a great choice to enjoy with family on a day like today. If you haven’t seen it yet, we highly recommend it. #barbecue 🌮✨ @chefstable, and for fans, season 7 premieres today.”

Seeing our name in @nytimes feels surreal, but looking back, every step of this journey brought us here. ✨📰

Long before the headlines, this restaurant was built on late nights, endless recipe tests, burnt fingertips, and a refusal to compromise on tradition. Every sauce, every handmade tortilla, and every flavor on your plate carries years of practice, passion, and stubborn dedication.

Macha Mía—the salsa macha that lived in my memories—is now a reality. 🌶️🔥

The chiles, seeds, and flavors I grew up with—sesame seeds, peanuts, and almonds—are toasted to create a deep, spicy flavor. A burst of flavor on your eggs in the morning, in a taco in the afternoon, or stirred into a hot bowl of soup for dinner.

Because our recipes travel with us, and as long as we continue to cook them, our traditional cuisines will stay alive.

For me, barbacoa is about memories, family, and tradition.
From Capulhuac to Philadelphia 🇲🇽🇺🇸, I continue cooking the way my parents and grandparents taught me, honoring those who came before us—the ones who carried this knowledge and kept these traditions alive.

Barbacoa takes time, love, and sacrifice. Handmade tortillas, one by one. Patience is part of the process. 🌽🔥

Because as long as we keep cooking and passing down our traditions, our traditional kitchens will never die.
