Phoenix Dancong in a Glass

Before the flickering glow of the candlelit bar,
we blend 🍸 Phoenix Dancong and Cocktails 🍃.Centuries of tea-making artistry transform into a Chaozhou moonbeam, captured within the glass.

📷The camera follows Ring, founder of Bar Choice, as he scales Mount Wudong on Phoenix Mountain with Master Zhan Tianpei—guardian of the Phoenix Dancong intangible cultural heritage.

We watch tea pickers’ fingers dance amidst the morning mist;ancient techniques awaken in the bouquet of spirits.

The warmth once cradled in our fathers’ palms
now flows along the curves of the glass, a river of stars.

“This glass holds more than just tea and spirits.”
It is the clinking of Kungfu tea vessels, the bold spirit of Chaozhou merchants venturing across the seas, and above all—a rebirth of traditional Chinese culture, stirred into the heart of a cocktail.

On October 21, Penang’s Backdoor Bodega will bring its mischievous local-flavour cocktails to Bar Choice Shanghai.

Tucked behind a streetwear shop in George Town, @backdoorbodega is known for drinks that fold local ingredients like torch ginger flower, belacan and pandan into playful and flavourful cocktails. For one night only, Janice Lok @janicecw__ and Thanesh Joel @stayin6ftunder will join Ring Zhao @ringzhao2024 of @barchoice_teabar behind the bar, where the pair will shake it up alongside a live DJ set built for a late-night room.

To mark this co-creation, coffee and spirits speak the same language in our new signature creation: The Wintersweet Trinidad Sour

Taking inspiration from the bold, bittersweet soul of a Trinidad Sour, this cocktail fuses Kenya espresso extracted with OutIn gear alongside Eastern wintersweet, green tea whisky, white cacao, raspberry, and fresh lemon.

🧾 Recipe / 配方:
• 30ml Wintersweet Green Tea Infused Whisky
• 15ml Kenya Espresso (Extracted via OutIn)
• 7.5ml White Cacao Liqueur
• 7.5ml Fresh Lemon Juice
• 5ml Raspberry Syrup
• 5ml Angostura Bitters

🍸 Method: Shake vigorously with ice, double strain into a chilled glass, and enjoy.

Known as the “Medicine Capital of China” and the “World Capital of Traditional Chinese Medicine,” the market greets you with a rich herbal aroma when you get close. Liao Wu Wei, rhubarb, Wu Zhu Yu, whole scorpions, cat’s claw root… as many as 2,800 varieties of Chinese herbs. We picked a few to blend into our cocktail inspiration. Stay tuned 🥂

The three-day Barra Slow Festival has come to a wonderful close! We were truly honored to be invited to this magnificent gathering of nearly 100,000 visitors.

For this event, we presented our signature tea and spirits alongside Betty’s exquisite desserts, hosting pairing sessions and hands-on workshops. A big thank you to Macau TV for the two-day coverage, and to our local friends for loving our products so much that everything completely sold out.
