by one count dubai saw more than 100 restaurant openings last year, and 2026 is tracking just as dense. every month brings another wave: hand roll bars, new york delis, parisian imports, beach clubs.

nobody publishes the closure numbers with the same enthusiasm.

the 2026 world cup wrapped with spain lifting the trophy and the hospitality industry counting money. bank of america estimated the tournament boosted spending by around $40 billion globally, roughly half of it in the us, while technomic projected $1.9 billion in incremental american foodservice sales across the six week run.

per open table data reported this summer, 60 percent of travellers booked a hotel specifically because of its restaurant, and hotel dining is up year on year.

the implication for operators is enormous. f&b used to be the amenity that lost money gracefully. now it’s the acquisition channel. a destination restaurant fills rooms, and the room revenue subsidises culinary ambition the standalone market can’t afford.

dubai's financial centre is collecting london restaurants the way it once collected banks. gymkhana is bringing its club-room indian to difc. barrafina's counter tapas has arrived. scott's is en route.

the logic is clean: difc has london's spending power without london's costs, plus a diner who already knows these brands from mayfair and soho.

the question worth asking is what it does to dubai's own identity. importing proven names fills tables fast, but no city ever became a food capital on franchises alone. the interesting openings are still the homegrown ones. by @barside.in

dishoom, the london institution built on bombay’s irani café memory, has confirmed its first us outpost in manhattan’s nomad. the expansion is backed by l catterton, the private equity firm linked to lvmh, which took a minority stake reportedly valuing the group at £300 million.

read that number again. a restaurant brand built on black daal and 1960s bombay nostalgia is valued like a luxury house.

maido spent a year as the world’s best restaurant. under 50 best rules, former no 1 restaurants move to the best of the best list and can’t be ranked again, which means the november ceremony crowns someone new.
the interesting question isn’t who wins. it’s whether the list keeps drifting away from europe. lima has taken two of the last four titles and the centre of gravity in fine dining keeps moving.

ihcl closed the first quarter of fy2027 with 20 new signings and 11 openings, taking the portfolio to 645 hotels with 263 in the pipeline. the road to 700 is now measured in quarters, not years.
the scale story matters beyond ihcl. india is projected to lead asia pacific outside china in new hotel openings, and every one of those properties needs f&b concepts, bar programmes, and marketing teams. the talent market is about to get very interesting.
