Locals are use to flooding, but not IN our houses 😅 Luckily our basement is primarily “water proof”. Might have lost the treadmill. And not sure about my poor sunflowers. #noreaster storytime from my last harvest. Sometimes, gardening is luck. I strongly believe mine is rooted in my DNA from my grandfather. I’m so impressed that he managed so many farms in Portugal. I wish I was a little older to have asked more questions, heard more from his perspective. I’ll get a random idea in my head and just run with it… like poached eggs on sourdough. But somewhere between motherhood and completely losing track of time, those eggs got a little too cooked. 😂

So… I had to pivot.

Luckily, I had some shishito peppers from the garden to make an egg salad toast with a little hot sauce on top. And honestly? The accidental meal did NOT disappoint.🍳🌶️

Sometimes the best recipes are the ones you didn’t actually plan for.

Ingredients:
2 hard-boiled eggs, chopped
3 shishito peppers, finely chopped
2–3 tbsp finely diced onion
2 tbsp mayonnaise
2 tbsp crumbled blue cheese
1 slice sourdough bread
Hot sauce, for drizzling
Salt, black pepper, garlic powder
1 tbsp EVOO for sautéing the veggies

Instructions:
Finely dice the peppers and onion. Quickly sauté the veggies until softened. The supposed poached eggs become hard boiled 😂 Smash the eggs and mixed with the cooked/cooled shishitos & onion. Stir in the mayo and blue cheese. Season with salt pepper garlic powder. Toast and butter your sour dough slice. Generously pile the egg salad over the toast. Drizzle your favorite hot sauce over the top (hank sauce for the win)!

Those first few days after a skin cancer diagnosis can feel so scary and uncertain. 🤍 I remember feeling overwhelmed by the unknown.

If you’re in that place right now, I want to be the friend you can lean on for a little guidance, reassurance, and a reminder that it’s going to be okay.

Healing takes time, but it does get better. 🤍

Garden Harvest Balsamic Rotini, but make it ASMR lol. The eggplant, tomatoes and parsley were all grown in my garden 🙏🏼

Ingredients:
2–3 tbsp olive oil
½ eggplant
½ red pepper
1 small onion
4 garlic cloves
1–2 cups cherry tomatoes
8 oz rotini
½ cup parmesan
½ cup fresh parsley
2–3 tbsp balsamic glaze
salt + pepper + garlic spice to taste

Instructions:
Dice the eggplant, red pepper and onion. Heat 2–3 tbsp olive oil in a large skillet over medium-high heat. Add the eggplant, onion, garlic, red pepper, and tomatoes. Cook for about 10-15 minutes, stirring occasionally. Boil had box of rotini in salted water according to the package directions. Reserve about ½ cup pasta water, then drain. Toss the cooked rotini directly into the skillet with the vegetables. Add a splash of reserved pasta water if needed and toss everything together. Stir in the chopped garden parsley and freshly grated Parmesan. Drizzle 2–3 tbsp balsamic glaze over the pasta and gently toss.
