I missed National Gumbo Day yesterday so here’s a Chicken and sausage gumbo I made over the weekend.

I used plain smoked sausage and green onion smoked sausage from @petitjeanmeats

The green onion sausage made for a great flavor addition to the gumbo!

Beef short ribs with bacon mashed potatoes from @erlings_memphis

I also had the crawfish bisque and blueberry cobbler with cinnamon ice cream. Everything was outstanding including the service!

Candied jalapeño deer jerky with some help from @psseasoning! This kit makes it too easy!

Sliced up a backstrap, marinated in the mix overnight, set the oven on 180 with the door cracked and flipped every 30 min until it was done!

Now I have some tasty jerky ready for a snack anytime!

Had a great time at Woolly Hollow State Park last weekend despite the heat! The camp is super clean and the staff is very helpful and friendly!

The lake is way down but still plenty of water to kayak, fish and explore. Cooked up some ramen with Boursin cheese and bacon and some Spanish rice with jalapeno cheddar smoked sausage.
