Whole chicken done on the @kamadojoe with a little Cornish hen “sidecar”

Nothing too fancy this time, but it turned out fantastic. Sometimes it’s easy to keep trying to get more creative and unique but the basics and tried and true are just that for a reason, and if you can’t nail those; it’s time to go back. This time though, I went back just to cook up some classic chicken.

Brined for a day in Italian dressing and some beer, seasoned with garlic powder, salt, pepper, lemon pepper- that’s it. Popped it on the KJ for 2 hours or so at 325 until it reached 165, rested with a butter topping for 15 min.

Celebrated a big old alpha buck tonight harvested recently.

He was a 10 pointer, and this venison tenderloin was a 10 as well!

Started off with a beautiful tenderloin, marinaded in a worchestshire/garlic/olive oil/galbi mixture for 7 hours, then rubbed with @neilsarap wild game seasoning, salt, pepper, and garlic powder. Got a pan super hot, waited for butter to brown and foam, 4 minutes each side for a perfect crust and rested in foil for 10 min.

Brined for a day, Cajun rubbed for a day, and then smoked at 275 until IT was 150, and then cranked up to 350 until 170. Wrapped in foil and put in the Coleman casket to restttt innnn peaceeeeee.

Fried alligator head? Bacon football?

It’s a turkey roast wrapped in bacon and drizzled with some of that @countrysweetsauce and DAMN did it turn out good!

300 degrees pecan and hickory wood smoke bath and pulled at 170 for a 15 min rest under foil. Delicious, moist, and flavorful.

Let me take you on a trip through Philly.

Philly cheese steaks the fast way- griddle, top round roast beef, beef base, worchestshire, butter, onions, and provolone and with a horseradish chive aioli on the side.

SOUND ON!

Listen to the majestic soothing sounds of Chicken wings roastingggg over an opennn fireee

Fired up the SS Flavortown and Smoked these beauties with some pecan cherry and mesquite and they turned out perfect. Went hot on em and got it done in under an hour.

The real kick to those nice glazed ones though is an amazing sauce that doesn’t quite taste like anything else out there called @countrysweetsauce . Try it for yourself if you ever find some- some funky unique stuff.
