POSTS STORIES REELS

A few from a weekend in the 📍Isle of Wight ✨

Got a little impromptu weekend trip away to my favourite place, didn’t think I’d get the chance this year but a change of scenery was well needed- a long 2 year wait.. 🌊

So grateful to have a little voyage to take in some sea air & reset..✨

Will post more about walks & food, but here’s a few of Cowes ☀️

Hopefully back again soon.. 🌊

Where are your favourite spots on the island?! 🏝️

A few from October... 🎃🌿✨

Feel like I say this every month, but seriously where has this one gone.. 🫪

Started the month with a lovely monoprinting workshop hosted by @thenorunclubnf , a lovely morning exploring the forest & trying a new activity- thanks again to the hosts. The weather (asides from the last week or so!) hasn’t been too bad & I just love the change in colours out there. Plus a well overdue trip to Bolderwood where we actually saw a deer- or I think a stag with the horns! Plus had a lovely catch up meal with the gang & haven’t really done a lot of baking this month.

The anxiety has still be working overtime & a lot of thoughts have been happening, everything feels far longer than the past 2 months! But after a very busy few days hopefully a better step is on the way- so hoping for a slightly less stressful November.. 🫨🤞🏻

So another few weeks of getting used to different routines, but looking forward to some nice days out & hoping the weather doesn’t get too rainy! 🌿☀️

Hope you’ve had a good month, any exciting plans for Novemeber?! 🙂

Loaf Tin Biscoff Cornflake Flapjacks 🍯🍫✨

I kept seeing versions of this on insta’ & had to give it a try, plus I thought it could be a good travelling/to take to work snack- with the added temptation of this also being Biscoff based haha! 😏

I halved the original recipe as I thought it would go into an 8x8 tin, but as I poured the mix in it was definitely more loaf tin size so double this would be perfect for an 8x8. Super quick to get the mix ready & another great one to add your own elements to. I added a drizzle of dark choc on the top to help with the super sweet biscoff, but you could add in some choc chips or even rasisins/nuts.

These were a crunchy, chewy dream without being overly sweet; the crunch from the cornflakes gives a lovely texture element & the sticky syrup makes them so moreish. They weren’t too crumbly so I think they’d travel fairly well- the chocolate drizzle may soften in warmer weather, adding it to the mix may work too!?

2 cups Cornflakes
65g cups rolled oats
50g cup brown sugar
30g self-raising flour
pinch salt flakes
80g butter, chopped
65g Biscoff spread
45g golden syrup
30g dark choc for topping (optional)

Preheat oven to 180C/160 fan-forced and line a loaf tin.

Place Cornflakes in a large bowl and crush up slightly, then add the rolled oats, sugar, flour, salt & mix well.

Melt butter, Biscoff spread and golden syrup in the microwave then pour over dry ingredients and mix well.

Spread into prepared pan and press firmly into an even thickness, bake for 30 minutes or until golden and set.
While still warm, gently press knife into the top to mark slices.

Allow to cool then melt the dark choc to drizzle over, if using, then pop in the fridge for 20-30 mins to set.

Fully cut the square & enjoy!

I really like this super quick recipe & will be making another batch soon for sure- what extra flavours would you enjoy!? 🍫🍯

📍Bolderwood, New Forest 🍁🦌☀️

This weeks @thenorunclubnf walk was back at the OG Bolderwood, haven’t been here since February! 🌿🦌

It’s definitely getting chilly out there but this is my favourite season. The walk was great & seeing the changes in the forest is amazing! 🍁🍂

And then to end our walk we FINALLY saw a deer at the lookout spot- it was absolutely beautiful & my camera doesn’t do it justice! 🦌

Another lovely walk & hopefully not as long till the next visit 🌿

What are you doing this weekend?! 🥾

🍽️ The Parish Lantern, 📍Whiteparish

On Friday we visited The Parish Lantern for a girls evening catch-up, I hadn’t been here for years but always hear good reviews! 🍽️

This is your classic, welcoming, country style pub & as soon as you walk in to see full tables you know it should be good! Although it was busy our table wasn’t too bad & the service was great. For main my friends went for the New York Chicken & I (as always) the Steak Burger- plus a cheeky side of mozzarella sticks. The portions were very generous & everything tasted fresh, they had great options as well as specials too. My burger was lovely but the onion rings were devine- plus it came with bacon & cheese as standard which is always a winner for me! 😆👏🏻

Safe to say we were pretty full after all that, but you’ve always got to have a little something sweet right!? As tempting as the Biscoff cheesecake was, I opted for the salted caramel ice cream which was SO good & the perfect sweet treat. We had a few more drinks then spend the rest of the evening chatting away! 🍨🍷

Overall we had a lovely meal out & shall be returning again for sure; all the staff are lovely & we had a great time ☺️

What did you last order on a meal out!? 🍽️

Last weekend I joined the @thenorunclubnf Monoprinting Workshop, held in 📍Minstead 🌿🎨

So glad to finally be able to join an event & this looked like great fun; we started with the walk, stopping to hear stories & most importantly collecting our materials. We were given a brief of what to look out for & luckily remembered to pick things up whilst talking! It was great as always chatting with everyone & hearing more stories from our New Forest 🌿🪾🥾

Once back at the hall we had a demo of some of the different effects/methods to try & then it was time to have a go! The bigger leaves were a lot easier to work with, plus using a lighter base layer for a darker outline. It was great to see everyone trying different methods & what we all created. It was really relaxing just having the time to experiment & learning something new. 🧑‍🎨🎨

Overall a great morning with some lovely people, a huge thank you again to @thenorunclubnf & team 👏🏻

Have you ever tried nonprinting or do this a hobby?! 🎨

A few from September.. ✨

Another quick month with lots going on, but started by turning 32 which feels so odd 🥹

Still getting settled with the new routines & trying to figuring things out, another high level anxiety month that’s for sure! 🫪

But there’s been some nice days out & catching up with the gang for a belated birthday takeaway & quiz night- safe to say I scored last.. 🤣

Managed to get a few bakes in & scary to think it’s almost time to start planning some festive ones! ❄️

What have you been up to this month?☀️

📍Mottisfont, Romsey ☀️🌿

On Tuesday we went for a little visit to Mottisfont as the @nationaltrust have free entry for the Heritage Open Days, plus they had opened the ‘maids’ rooms’.

It wasn’t the best weather when we got there so headed straight for the house, but luckily the sunshine had come out by the time we’d walked around! There were lots of rooms & areas to see with plenty of historic info to read throughout. The maids’ rooms were up a few floors (I expected downstairs!) with lovely views of the gardens. There was also an art exhibition in another part of the house. I’d say we spent 20-30mins walking around & as any old building it did get rather warm!

Then we stopped for a coffee break which was much needed & although the food was on the pricey side it did taste good- I’d buy drinks but take snacks if visiting again.

We then headed to the Rose Garden which was full of many plants & things to see- you’ll have to forgive my lack of horticultural knowledge! Finally taking a walk along with river watching the local residents, how beautiful are those swans.

Overall a lovely little outing & so glad the weather brightened up!

Have you visited here or anywhere else in the area!?

Millionaires Style Brownies 🍫✨

When I saw this creation on @biteofthebakes a few weeks ago yet again I had to give it a go! Brownies & millionaires shortbread are possibly my 2 top picks for sweet treats, but making caramel isn’t a skill I’ve mastered yet; so using rolos & shortbread biscuits looked like a fab idea. For the brownies I used my current fav loaf tin recipe from @janespatisserie 👏🏻

These are the perfect mix of chewy, sweet & crunchy let me tell you.. This is one that is best served after a few hours cooling then chilled giving a nice fudgy bake, I would keep this once in the fridge then take out 10 mins or so before eating- but whatever you enjoy they’ll be fab! 🤤😍

Super happy with this one & a re-bake for sure! 👏🏻

75g dark choc (from a 100g bar use the remaining 25g for the filling)
75g butter
1 egg & 1 egg yolk
100g light brown sugar
40g plain flour
20g cocoa powder
60-70g rolos/caramel choc & shortbread chunks
+ extra for toppings (optional)

1.Oven to 180 fan, line a loaf tin.
2.Melt the butter & dark chocolate & set aside to cool.
3.Whisk the eggs & sugar until creamy (2-3 mins), then pour in the melted mix- stirring together.
4.Add in the flour & cocoa, folding together with a spatula.
5.Finally fold in the rolos & shortbread chunks.
6.Pour into the loaf tin & smooth out- add any extra if using!
7.Bake for 25 mins, then add on a few extra rolos & shortbread chunks whilst hot- I added a sprinkle of sea salt too.
8. Allow to fully cool then ideally in the fridge for a few hours, cut & enjoy!

Let me know what you think of this flavour & what you like to add to your brownies! 🍫

A few from August.. ☀️

Where has this month gone.. 🫪

Been an unexpectedly weird few weeks with some anxiety inducing changes, which has sadly meant things have gone quiet here in the meantime. But hoping to get back to it soon once things settle! 🤯

But there’s been some nice afternoons out & as always seeing the gang for more fabulous food- that’s when you know you picked good ones! 😉🌭

What have you been up to this month?! ☀️
