My non-vegan husband tried 2 types of vegan meatballs🌱

We both actually tried the @beyondmeat and @waitrose plant living meatballs for the first time!🙌🏽

The beyond ones were more ‘meaty’ and the plant living ones were more herby and had a slightly softer texture.

We love using the loyd grosssman bolognese sauce🙌🏽

And a good quality pasta like @dececco_pasta ✨

I couldn’t be bothered to chop veg up! So I used some frozen peppers😝 but usually I love adding onion, pepper & courgette to my pasta dishes for flavour and bulking out the sauce 🌱

Have you tried any of these?😍

My non-vegan husband tried @juicymarbles Thick-Cut Filet Plant-Based Steaks… and let’s just say he couldn’t believe how real they tasted. 🥩

Ad| We picked them up in @tesco, served them with homemade chips and a vegan peppercorn sauce, and they were genuinely the best plant-based steaks we’ve tried. The texture was incredibly realistic, the flavour was rich and beefy, and we both cleared our plates.

Safe to say this meal will be making a regular appearance in our house. 🙌

My non-vegan husband cooked me a vegan dinner, Tofu and Cauliflower curry🌱🙌🏽

Harry surprisingly loves cooking with @tofoo because, in his words ‘tofu is like a sponge, it takes up all the flavour and you don’t need to do much to it’🙌🏽

People sometimes are scared of tofu because the texture and the fact it’s plain. But this actually makes it so much better and easier to work with! Chuck it in the airfryer for a firmer crispy texture, gently fry it in a pan for a softer consistency with a crunchy outer layer. Boil it in broth to keep it soft but soak up flavours! The list goes on!

Harry’s curry recipe:
1/2 jar of curry paste (use your fav curry- measurements may vary depending on your preference)
1 block of @tofoo (280g)
1 white onion
1 cup cauliflower
1 tin of chopped tomatoes
100ml vegan cream

Method:
Chop the tofu into small blocks.
Air fry for 10 mins at 200 degrees.
Chop the onion and cauliflower, and fry in 1 tsp olive oil.
Add the curry paste. Let this cook for 3 minutes before adding the tofu.
Add the tofu, and then add in the chopped tomatoes.
Mix well.
Now you can add the cream. Serve on some rice and enjoy😍

Will you try to cook with tofu at home too? If Harry can, you can😉

My non-vegan husband made us vegan brownies😍

How do you think he did?😝🙌🏽🌱

Here’s the recipe:
Recipe:

120ml aquafaba (chickpea water)
290g castor sugar
170g dark chocolate (I used 75%)
112g vegan butter (storks)
180g plain flour
45g cacao powder
3/4 tsp salt
1 tsp vanilla extract
1.5 tsp instant coffee
85g chocolate chips/chunks

Method:
1. Preheat oven to 175 degrees.
2. sieve the flour and cacao powder and set aside in a bowl.
3. Pour the aquafaba and sugar in a large bowl and use an electric hand whisk for 2–2.5 mins until the mixture is white and thick.
4. Melt the 75% chocolate with the butter (either double boiler or 30 second intervals in a microwave).
5. Add the vanilla, salt and coffee to the aquafaba mixture and fold in with a spatula.
6. Now add the melted chocolate and butter to this and fold in.
7. Next add the flour and cacao powder to the wet mixture and the chocolate chunks/chips.
8. Fold this together until combined.
9. Pour into an 8x8 baking dish.
10. Bake for 30 mins. All ovens are different so check with a toothpick. It shouldn’t be too wet but will have a little bit of moisture on it. If it’s still runny cook for a further few minutes and keep checking. You want it to be more gooey than over baked.
11. Once baked, let it cool in the dish for 20 mins. Then remove it from the dish and let it cool for a further 20-30 mins before cutting

My non vegan husband tried vegan lamb kebabs for the first time🙌🏽🌱😍

I have to say they were absolutely delicious and I can’t wait to make them again! When I was buying the ingredients, I saw like 40 ingredients on the flatbreads, so I decided to make a 3 ingredient one instead, SO good and fresh😍

What I used:
@this.uk lamb kebabs🥙

My homemade flatbread:
200g plain flour
1/4 tsp salt
100ml warm water
2 tbsp olive oil

Method: add the flour into a large bowl. Add the warm water bit by bit whilst mixing gently. Add the salt and olive oil and knead for a few mins until dough is smooth.

Chop into 4 pieces and roll into flatbread shapes (about the thickness of a £1 coin).

I fried mine in garlic butter for some extra flavour. Fry until there’s airy bubbles. Approx 3 mins per side on a medium to high heat.

I added salad, hummus, picked onions and plain yogurt😍
