Pasta with Mamma Marzia: 
Fresh Pasta Dough 🍝 (Part 1)

Real Italian pasta has just 2 ingredients… plus a sprinkle of love ❤️

Ingredients (serves 8)

	•	8 large eggs
	•	800g flour : 70% tipo 00, 30% semola (all-purpose flour works too!)
	•	Ratio: 1 egg to every 100g flour

Method

	1.	Pour the flour onto a wood board and shape it into a volcano with a well in the center
	2.	Crack the eggs into the well
	3.	Beat the eggs with a fork, then slowly pull in flour from the inner walls as you mix
	4.	Knead by hand for 10 minutes, until smooth and elastic
	5.	Hold back a little flour if it feels wet egg size varies, so how much flour it absorbs isn’t exact
	6.	Wrap in plastic and rest in the fridge  at least 30 minutes, up to 24 hours
	7.	Take it out 30 minutes before rolling, to come back to room temp

One pot of vegetables: pastina, a vegetable salad, and broth ready for another meal. Simple Italian home cooking, just like my nonna taught me. ❤️ Save this recipe!

🥕 VEGETABLE BROTH
• Water to cover the vegetables
• 3 carrots, washed well, unpeeled
• 2 potatoes
• 4 cherry tomatoes
• 1 zucchini
• 2 stick Celery 
• 1 onion
• Salt and pepper

1. Put everything in a large pot. Bring to a boil over medium-high heat, then lower the heat, cover, and simmer gently for 30/45 minutes, until tender.
2. Strain, keeping both the broth and vegetables.
3. Set aside some potatoes, carrots, and zucchini for the salad. Blend the remaining vegetables with a little broth.

🍲 PASTINA
Add some blended vegetables to a portion of broth. I also added tiny meatballs for extra flavor. Cook the meatballs through for 10 minutes, then add pastina and cook according to the package. Finish with Parmigiano Reggiano.

🥗 VEGETABLE SALAD
Cut the reserved vegetables into pieces. Dress with olive oil, white vinegar, salt, and parsley.

Save the remaining broth for risotto or soup, and the extra blended vegetables for another pastina. Cool promptly and refrigerate or freeze.

And always, a sprinkle of love. ❤️

Pasta e Fagioli  My Mom Recipe
This is Italian food you won’t find in a restaurant.
Im aware that now some restaurants have pasta e fagioli definitely not like this one. This is my mom recipe and before that my nonna.
This dish is perfect for this series because it tells the stories of so many Italian families that struggled back then.
I made fresh pasta with water and flour let me know if you want the recipe.
Ingredients

* Dried beans
* Water, enough to cover the beans, plus extra as needed
* 1 garlic clove
* A handful of tomatoes
* A piece of celery
* Extra virgin olive oil, for cooking and serving
* Fresh pasta made with flour and water, or dried pasta
* Salt, to taste
* Parmigiano Reggiano, for serving
* A sprinkle of love ❤️

Method

1. Soak the dried beans in plenty of water overnight. I soaked mine for 24 hours. Drain and rinse them.
2. Put the beans in a pot and cover with fresh water. Start cooking them without adding any other ingredients.
3. Bring to a boil over high heat, then reduce the heat to a gentle simmer. My beans took about 1 hour and 15 minutes to cook, but the time will depend on your beans. Taste them as they cook to check when they’re tender.
4. When the beans are almost ready, add the garlic, tomatoes, celery, and a drizzle of extra virgin olive oil. Continue simmering until the beans and vegetables are tender. Add more water if needed so there is enough liquid to cook the pasta.
5. If using dried pasta, add it while the beans are almost cooked, allowing for the cooking time on the package usually around 10–15 minutes. If using fresh flour-and-water pasta, as I did, add it once the beans are tender and cook until the pasta is ready. Stir gently to prevent sticking.
6. I add the salt once the beans are cooked. Taste and adjust the seasoning before serving.
7. Serve with a drizzle of extra virgin olive oil and grated Parmigiano Reggiano.

My nonna’s tips for fresh pasta 🍝
Making pasta for the first time? Take it one step at a time.

Ingredients (serves 5)
• 5 large eggs
• 500 g flour: 350 g tipo 00 + 150 g semola rimacinata
You can also use all-purpose flour.
•A sprinkle of love

Make a vulcano in the flour, add the eggs, and beat them with a fork, slowly pulling in flour. Hold back a little flour at first eggs vary in size. Knead for about 10 minutes, until smooth.

Too sticky? Add a little flour and knead again. Too dry? Wet your hands and knead again. Wrap the dough and rest it for at least 30 minutes.

Cut off one piece and keep the rest covered. On your pasta machine’s widest setting (number 1 on mine), roll the dough through, fold it, and roll it through again a few times. Then move through settings 2, 3, 4 and onward, one at a time. I use 5 or 6 for fettuccine and 7 for lasagna sheets. Machine numbers can vary, so watch the thickness of your dough.
