🍇 Elderberry Season 🍇

Elderberries are one of my favourite things to forage this time of year. 

They’re rich in antioxidants and vitamin C, and have traditionally been used to support the immune system through cold and flu season, nature’s support, straight from the hedgerow.

This batch is spiced with orange peel, nutmeg, cinnamon, cloves, turmeric and star anise, each one bringing its own traditional benefits too: cinnamon and turmeric for their warming, anti-inflammatory properties, cloves and star anise valued for their immune-supporting qualities, and orange peel for an extra hit of zesty flavour. 

In the UK, they’re ripe and ready for picking ✨

Fitting the title of granola girl more and more everyday 🍯

This was first time making granola and it came about because all of the options in the supermarket had so many additives and I thought…it can’t be that hard right?

So, here’s everything I put in mine and how I did it:

Seedy Granola ✨🌸🩵
- Goji Berries
- Dried Cranberries 
- Coconut Shavings
- Sesame Seeds
- Flax Seeds
- Pumpkin Seeds
- Chia Seeds
- Sunflower Seeds
- Almond Flakes
- Hazelnuts
- Walnuts
- Tahini 
- Olive Oil
- Golden Syrup 
- Organic Scottish Whole Rolled Oats
- Cinnamon
- Nutmeg
- A few crackles of Himalayan Pink Salt

Mix all ingredients together and put in the oven on high for 10-15 minutes then leave to cool for 30 mins before breaking up and storing 😇

Growing your own ingredients makes cooking feel so much more natural and rewarding ✨

I practice (as much as I can) seed to table whenever I cook for others and myself. 

Not only do the ingredients taste better with the ability to be as fresh as picking them a few hours before you serve them, but they also get to be completely organic and unprocessed.

This is a glimpse of my parents garden and veg patch! I plan to continue this practice on when I get my own land 🙏🏽✨

Here’s what I made for my end of summer retreat in kent ✨

My signature stuffed dates filled with soaked cashew nuts and almond butter with a welcome drink made of rose, hibiscus, cinnamon, ginger and agave 🌸

After practice lunch was served:

- Braised Leeks on a white garlic and cashew cream base, topped with toasted hazelnuts.
- Fennel and Grapefruit salad topped with pistachios and tossed in a mustard, red grapefruit and honey vinaigrette 
- Roasted home grown potatoes on a green goddess base of Ugandan avocado, parsley, coriander and soaked cashews
- Fried Plantain (because why not)
- Lentil, sweet potato and spinach dhal
- Berry pie served with cashew vanilla cream

All plant based to suit the easeful mood of the day on both the body and mind. Some were even surprised by the simplicity and flavors achieved in plant based cooking which made me a happy chef! Flexitarian cooking is great for your health (fiber maxinggg) but also a wonderful way to eat a little less meat without compromising on delicious fuel for your body!

*leeks and potatoes were home grown and picked morning of the event for full nourishment 😊

Mulberries are only around for a few short weeks in summer, and they barely travel, so I grab them whenever I spot them. Think softer, jammier blackberry, a little earthy, and packed with vitamin C, iron and anthocyanins (the pigments that give them that deep inky colour and act as antioxidants).

I cooked them down with dark cherries, coconut sugar and fresh rosemary into a glossy reduction. Spoon it over yoghurt, porridge or ice cream.

Mulberry & Dark Cherry Reduction

You’ll need

	•	200g mulberries
	•	200g dark cherries, pitted
	•	3 tbsp coconut sugar
	•	2 sprigs fresh rosemary
	•	Squeeze of lemon

Method:

Add everything to a small pan over a medium heat and add one cup of water. Simmer gently for 15 to 20 minutes, stirring now and then and lightly crushing the fruit, until thick and glossy. Take out the rosemary, cool, and store in a jar in the fridge for up to a week 🌿 by @belleatsz

A little throw back to my elderberry jelly production 🍇 

Sterilizing your jars before bottling them up for medium to long term storage is an essential step in the preservation process! It stops any microbes from entering your jars thus preventing any mold or contamination ☺️

Always heat your jars to about 80-90 degrees Celsius for about 15 minutes, then add the hot fluid and pop the lid on as tight as you can. This is when the vacuum is created! As the glass and the liquid cool, the air particles slow down and shrink, creating a nice airtight seal in there. 

I then pop them into the fridge (once back to room temp) for long term storage until I’m ready to use.

There were a lot of delicious foods and drink consumed on these two trips but here are a few of my highlights (aka the ones I didn’t forget to photograph oops 🙊)

My lovely friends dad made THE best Kumquat wine I’ve ever tasted (granted it the only one I’ve tried) but I loved it. This coming from someone who’s very picky with alcoholic drinks and rarely consumes it… make of that what you will. What I loved, other than the flavour, is that the fruits were grown in their garden!!! 

@poissonneriekennedymarseille is definitely not overhyped, and I was definitely book a table if you’re going to be in the area! The food and service were 10/10!

@tuba.club also had some lovely small plates at their Bikini Bar, perfect for walking down to their secret sunspot and going for a swim.

What I ate on my quick trip to Paris! 

@wani_paris_ 🥰 this was my second time here since discovering it last year while shopping in the area! I adore how fresh and vibrant their food is 👌🏽

@chefdapartyyy  I cannot wait to eat at your restaurant one day 🤞🏽😊 

@dumboparis  So..I didn’t realize that we actually have DUMBO in London, but the smash burger trend was worth the hype 💪🏽 

@boulangeriemamiche 🥐 As a (usually) lactose avoiding foodie, I couldn’t miss a morning pastry while in Paris 🙂‍↕️(praise be to lactose pills)

GEGEOR is a wine maker/ restaurant around the corner to where I have stayed a few times in Paris but never tried (I went in August and…it was closed for summer). I would absolutely go again for this ravioli 🤤

Lastly, L’Annexe, a small restaurant hidden off the main streets. My mum and I popped in for hot chocolate after leaving a gig and ended up learning that if someone asks if you like Rum…it means you’re getting a very alcoholic Baba 🤭 (The servers were so lovely and funny)!

Perhaps an annual affair, we shall see where Paris takes me next year!

All of the yummy things that appear when the sun is shiningggg ☀️ 

A perfectly prepared Cornish Scone (if I may say so myself) for a friends first try! - p.s must be eaten on the beach, in Cornwall, while baking in the sun. Oh and they loved it 😊 (Proud Cornish ancestors)

The most delicious Dutch Apple Cake made by another friend’s mum (she would win Bake Off!) Safe to say, 5 of us polished it off in under 2 days.

A cheeky Matcha and White Chocolate cookie from @matchado_london (Their matcha is 👌🏽👌🏽)

Rose Mochi filled with red bean wrapped in salted lotus leaf! (Sakura Mochi) 🪷

Dark ice chocolate with whipped cream and a marshmallow…this was a little much for me BUT I very much enjoyed my first few sips and the marshmallow 🙈 @ Knoops in Rye by @belleatsz

🌷 Mid Spring means outdoor dining in the UK is back 🌞 

A recurring favorite @koyako_london 🍜 it’s fresh, wholesome and in such a wholesome location - Broadway Market in Hackney ✨

@samsttongs and I went on a food exploration to @angelina.london and tried their tasting menu 👌🏽it was so good, if you’re in the area…(Shoreditch/ Dalston) book a table! Here is their Primavera Quattro Quarti with White Asparagus and pistachios.

East has some amazing eateries, obviously I’m biased…but you don’t need to trek 45 minutes to central or west for good food 🫶🏽📍

Now for some from my kitchen:

- Homegrown Rhubard and almond cake 🥰 light, fluffy and mixed with some ancient grain flour (spelt)!

- Potato salad but jazzed up with avocado mayonnaise, purple asparagus and cold smoked trout, topped with fresh dill 🙏🏽 A beaut warm weather dinner 🍽️ 

Not to be forgotten, @berenjaklondon (Little Berenjak) in Oxford. You have converted me to being a hummus lover ☺️ by @belleatsz

My go-to Vegetable Curry 🍛 

I first made this dish when studying Ayurvedic cooking and it instantly became one of my favorite easy dinners.

It’s light, adaptable and so easy to make. Plus, it’s somehow even better the next day 👌🏽

Warm, balanced and nourishing - all the things you want in a hearty meal before your overnight fast.

For my carb/ fibrous side of choice, I always like to mix quinoa with my rice. It’s just a really great source of fiber and complete proteins which aid in slower digestion, keeping you sustained for longer. 

I usually soak my rice overnight after washing it but if you forget (like I did) washing it through alone is fine. It just takes a little longer to cook and may not be as fluffy and light when compared.

- Add fresh or dried chili to your desired level of heat 🔥🌶️

- Total prep & cooking time is abt 40 minutes.

I cooked a lot while away and created some delicious plates! My favorite breakfast being the spelt crêpes with cardamom and plantain 😍
