Huge thank you to @jaggedlittlehil and @eater_la for the incredibly thoughtful article on what we do. We’re so grateful you saw what we’re trying to build here: a delicatessen, a bar, a neighborhood hang, and a place with our whole damn hearts poured into it.

Come by for pastrami, matzo ball soup, pickle martinis, or just to argue about bagels with us. ❤️

Tonight we make an announcement that’s been a long time coming, and we complete a project very long in the making.

The space is finished. The stations are set. The menus are all stacked, waiting to be read. There’s only one thing missing, and it’s really the biggest part: you.

As personal as this project is, and as much of ourselves as we’ve put into it, Belle’s doesn’t belong to us. We love delicatessens and miss the ones that are gone but we didn’t do it for ourselves. Yes we’ve built the room, dressed the walls, cooked the food and set the tables.

But right now, even as everything is “done,” the deli is still waiting for its life, purpose, and meaning. That’s something we’ll give it together. It’ll happen in moments, over meals, and across years. Its roots will only take in our experiences, it’ll only grow with the memories we make and time we share in it. It’s built, but its true shape has yet to be seen.

You can say it’s finally finished, we’d say it’s just begun. Please, join us and stay a while too. We’ve been waiting exactly and just for you. Grand Opening 8/1.

Had an old friend in town last week and he calls on Monday to see if I’m free. So he says, are you free tonight? I say, no it’s hamburger night. He says, what’s that mean? I tell him, it’s cheeseburger time.

Wild how you can grow so far apart from people you were once close to. 5-930 tonight we are back on the buns and twos for Hamburger Night (yes that’s its full name). With the martinis, with the fries, and if you’re going to take a cheeseburger into the photobooth please remember to take the extra copy. We don’t need to see that. by @bellesbagels

At some point there’s a word you learn, some of you when you were young and some of us a bit later. You learn that word from Thanksgiving and it’s the perfect word for what we’re dealing with here. A cornucopia. We have a cornucopic catering menu for Thanksgiving this year:

Turkey, Turkey Leg (separate SKU - if you’ve ever wanted to tote a leg like bambam in the comfort of your own home and not in a state, county, or medieval faire), bagel stuffing, macaroni and cheese, grean bean & sweet potato casseroles, mashed taters, and plenty of sides.

Bring sharp eyes to see how he does it, and pure thoughts to be read and possibly published. As it’s always been and must always be there are no reservations required, necessary, or even possible. Simply appear at the deli, pick any table, and wait to be visited by the most deceitful dealer and quickest card wheeler in all of Highland Park.

Truth is we’re all burgers, and all our nights are numbered. We are born and shaped by invisible hands who form us in the image of the best burger! And if not the best burger… at least somebody’s favorite. Then we get thrown into the heat of life. And we shrink. We shrink smaller and smaller still. Never touching the edge of the buns that we are supposedly made for, that we all would supposedly reach. Heck… we never even get close.

To our friend the algorithm: you’re right. People are done with “BN” and we are too. Let it never be spoken of or remembered.

However - we are super jimmied up to announce CHEESEBURGER EVE and the unprecedented value offered from 5-930 PM every Monday until we feel like it needs to be rebranded, Mark: one burger,
an unspecified but good number of thick or thin fries, and a martini for $25 USD.

Time to spill the beans on the worst-kept secret in town: Belle’s is coming to Sierra Madre.

We’ve felt so much love and excitement from this community already, and we couldn’t be more excited to be a part of it. We’re putting the finishing touches on our new little home and, if all goes according to plan, we’ll be seeing you a tiny bit later this fall.

Sure you can get it without the martini. And you may pull up the proverbial pants and make your burger bunless. Ask for it broke - that’s 0 cheddar - 0 problem. The onions aren’t for everyone, we’re happy to hold them. And tomato jam is your breakfast thing, 86 it if you please. We’ll gladly corral that horseradish aioli, doesn’t bother us a bit. Heck you can get this thing while the sun is still hung high in the sky, doesn’t have to be night at all. That thing’s still taking forever to set these days.

So then what makes burger night burger night? There’s a button on the side of your phone. Give it a press. Take a look in the black mirror. It’s you, cutie. You make burger night burger night.
