Ingredients:

2 sticks butter
100 grams sugar or 1/2 cup
200 grams brown sugar or 1 cup
190 grams all purpose flour or 1 1/2 cups
127 grams bread flour or 1 cup
1/2 tsp baking powder
1 tsp baking soda 
1 tsp sea or kosher salt
1 tsp instant espresso powder 
2 eggs + 1 egg yolk
2 tsp vanilla 
12 ounces of chocolate (I do a mix of dark and semi sweet chocolate chips AND chop up a chocolate bar for this bigger chunks)
1 cup toffee bits 
Flaky sea salt for topping 

Directions:

1. Over medium heat, melt butter and continue cooking until you get a nice golden brown color and then move to a large mixing bowl 

2. Add sugar and brown sugar to brown butter and mix. Set aside to cool

3. In a separate mixing bowl, add in the flours, baking soda and powder, salt and espresso powder. 

4. After brown butter mixture is room temp add eggs and egg yolk, and vanilla. Mix together.

5. Fold in your flour mixture until combined. Then fold in chocolate and toffee. 

6. Using a 3 inch scoop, portion dough out onto a lined baking sheet. Place in fridge for 24 hours. 

7. After 24 hours is up, you can either preheat your oven to 350 F and bake for 12-14 minutes or you can freeze in a freezer bag and pull out when you’re in the mood for fresh chocolate chip cookies! 

Top with sea salt and enjoy!

For as long as I can remember, I have loved cooking and learning how dishes were made. This started as a kid watching Rachel Ray, Guy Fieri and Emeril (BAM). Looking back, culinary school would’ve been a dream but I’ve finally gotten the courage to start filming and posting some delicious recipes I have either created, have been passed down or that I have found from other amazing chefs and creators over the years. So excited to see what this platform can do and I hope to inspire people to love being in the kitchen! 🫶🏼

If you make only one thing this weekend, let it be this decadent and warm Brown Butter Pumpkin Coffee Cake. Also drop a comment if your toddler has a personal rule to not let you finish cooking without a meltdown 😅

For the cake:

Pumpkin spice cake:

•1 stick of butter 
•1 1/4 cup brown sugar (I used dark)
•2 eggs
•1 cup pumpkin puree
•1/2 cup sour cream
•1 Tbsp vanilla extract
•2 cups all purpose flour
•1 Tbsp cinnamon
•1 Tbsp pumpkin pie spice
•1/2 tsp kosher salt
•1 tsp baking powder
•1 tsp baking soda
•1 cup chopped pecans (optional)

Streusel:

•1 1/2 cup flour 
•1 1/2 cup brown sugar (I used light)
•1 stick salted butter
•1 Tbsp cinnamon

Preheat oven to 375F

Directions:
•Over medium heat, melt 1 stick of butter. You’ll continue cooking and stirring occasionally until it turns a nice golden brown color. Remove from heat to cool in a large bowl while you do the next step

• In a medium bowl, combine all dry ingredients  besides the pecans and set aside.

• To the brown butter, add brown sugar, sour cream, pumpkin and mix. Add eggs and whisk together. Then add vanilla and combine. 

• Stir in dry ingredients and once combined fold in pecans. Set batter aside while we make streusel.

Streusel:
 
•Add all ingredients together and either with a pastry cutter, fork or even with hands, combine until butter in incorporated and you have a sandy texture. You could also melt butter and get a similar result (I actually prefer that method). 

•To a prepared cake pan add in half of the cake batter. Then add half of the streusel. Repeat by adding the rest of the cake batter and remaining streusel. Bake 60 minutes or until toothpick comes out clean.

I topped mine with a pumpkin spice and maple frosting drizzle!

Bacon, Onions and Gruyère oh my! This dip is one you HAVE to try.

Ingredients:
1–2 yellow onions thinly sliced (I used vadalia)
2 cloves of minced garlic
8 slices of bacon diced 
8 oz freshly shredded Gruyère cheese
1/2 teaspoon fresh thyme (can us dried as well)
Splash of beef broth
8 oz softened cream cheese 
1/2 cup sour cream
1/2 cup mayonnaise 
Salt and pepper to taste 

Preheat oven to 350F

Directions:
1. Pan fry bacon over medium heat 
2. Remove bacon and add thinly sliced onions directly to bacon renderings and lower heat slightly 
3. While those are sweating down, mix together cream cheese, sour cream, and mayonnaise
4. Once onions are very soft a#and have a nice brown color and jammy texture to them, add garlic and thyme. Cool until garlic is fragrant 
5. Add a splash of beef broth to deglaze the pan (this is where some amazing flavor is at!) cook until there is no liquid left. This should only take a couple of minutes. 
6. Set onions aside to cool slightly
7. Stir in 3/4 of the Gruyère cheese and bacon bits
8. Add in the Caramelized onions and add salt and pepper to taste
9. Add to oven safe dish and top with remaining Gruyère
10. Bake 15 minutes or until the top is to your desired color. I broiled for a few minutes

Pumpkin Pancakes you MUST make this fall! 

Whisk Together:
1 1/4 cups of all purpose flour 
2 Tablespoons brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons pumpkin spice 

In a separate bowl combine:
1 1/4 cups milk
1/4 cup pumpkin puree
2 tablespoons melted butter
1 large egg

Whisk in dry ingredients and set aside. Over medium heat, heat up griddle or pan. Add butter. Once melted add pancake batter (I used 1/3 cup to ensure out the pancakes). Once you start seeing bubbles on top it is time to flip!

Serve with cinnamon maple butter and syrup 🎃🍁
