Nothing hits quite like homemade soup on a cold autumn day 🍂😮‍💨 The mother of my boyfriend made this traditional Greek lentil soup🍲(φακές) for me when she came to visit, and it was the perfect meal for those colder days! 🍁🌧️🤎 Besides soup being the ultimate comfort food, this lentil soup is also nourishing, made with simple ingredients and so easy to prepare. Sometimes, the simplest meals really are the best!☺️ 🍲 Ingredients * 400 g dried brown lentils * 2 white onions, finely chopped * 3 garlic cloves * 1 tbsp tomato purée * 4 tbsp good-quality extra virgin olive oil * 2 bay leaves * 2 tsp dried oregano * Salt & black pepper, to taste * About 1.2 litres of water, plus extra if needed 🤎 How to make it 1. Soak the lentils: let the lentils sit in warm water for 15–30 minutes 2. Drain and rinse the lentils, then add them to a large pot with approximately 1.2 litres of fresh water, ensuring they’re covered 3. Stir in the finely chopped onions, garlic, tomato purée and olive oil 4.Add the oregano, salt and pepper, and stir everything together. Add the bay leaves. 5. Bring the soup to a boil, then reduce the heat and let it gently simmer for approximately 35–50 minutes, stirring occasionally. Add a little extra hot water if the soup becomes too thick or the lentils start to look dry 6. Let the flavours develop! Cook until the lentils are completely tender and the flavours have come together. ✨ My tip: Make it a little earlier in the day and reheat it for dinner. This was all the flavours have fully soaked in! Serve with some crunchy bread, crumbled feta or a little red wine vinegar for extra flavour. Enjoy!🤩 by @bloomingbellacollective
