🍑Summer Cobbler with @bloomranch Peaches 🍑

CRUST
2½ cups all-purpose flour
1 tbsp granulated sugar
1 tsp salt
1 cup cold Kerrygold unsalted butter, cubed
½ cup ice water

FILLING
8 large @bloomranch peaches
¾ cup granulated sugar
1 cup light brown sugar
3 tbsp cornstarch
1½ tsp vanilla extract
1 tsp ground cinnamon
¼ tsp ground nutmeg
Juice of ½ lemon
⅛ tsp salt

FINISHING
1 egg, beaten (egg wash)
1 tbsp turbinado sugar

DIRECTIONS

1. Make the dough
Whisk flour, sugar, and salt together. Cut in cold @kerrygoldusa butter until pea-sized crumbs remain. Add ice water a little at a time, roughly stacking until dough just holds together and layers of butter and dough are distinct. Divide in half, wrap, and chill at least 1 hour.

2. Blanch the peaches
Score an X on the bottom of each peach. Boil water, drop peaches in for 30-45 seconds, then transfer to an ice bath.

3. Peel and slice
Peel skins off (should slip right off), then slice peaches into a large bowl.

4. Macerate the filling
Toss sliced peaches with both sugars, cornstarch, vanilla, cinnamon, nutmeg, lemon juice, and salt. Let sit 15-20 minutes so juices release naturally, no stovetop needed. Drain off some excess liquid before filling to keep the bottom crust from going soggy.

5. Roll bottom crust
Preheat oven to 350°F. Roll out one dough disk and fit into a 9-inch pie dish, letting edges hang over.

6. Fill and top
Pour macerated peaches into the bottom crust. Roll out the second disk and place on top (or cut into strips for a lattice). Trim and crimp edges.

7. Egg wash and vent
Brush top crust with beaten egg, sprinkle with turbinado sugar, and cut a few slits for steam.

8. Bake
Bake at 350°F for 35-45min , until crust is deep golden and filling bubbles through the vents. Cool at least 2 hours before slicing. by @bloomranch
