Bakers’s Block Episode 1: Brown Butter Pumpkin Chai Cake! 🎃✨☕️

Thank you all for your wonderful suggestions, I’ll definitely be keeping this series going after our Halloween Cake Party because there’s just too many great cakes to try!

This cake recipe was inspired and adapted from @ash_baber Pumpkin Spice Latte Cake (and made gluten free), see recipe below:

For the cake:
- 255 grams gluten free flour (I use 85 grams each of Trader Joe’s gluten free flour, oat flour, and almond flour)
- 1 tablespoon pumpkin pie spice
- 1 tablespoon chai powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 400g pumpkin puree (about 1 can)
- 250g light brown sugar
- 2 sticks (1/2 cup) browned butter
- 4 eggs
- 2 teaspoons vanilla extract

For the milk soak
- 1/2 cup milk
- 1 teaspoon chai powder
- 1 teaspoon pumpkin pie spice
- 1 tablespoon brown sugar

For the frosting
- 16oz cream cheese (2 blocks) - room temp
- 2 sticks browned butter - room temp
- 1 teaspoon vanilla
- powdered sugar

Steps
1) brown your butter
2) mix the dry ingredients: whisk flours, spices, salt, baking powder and baking soda
3) mix the wet ingredients: whisk brown sugar, brown butter, pumpkin puree, eggs, and vanilla
4) add dry ingredients to wet and whisk until well combined
5) let batter rest for 15 mins before splitting into 2 8-inch cake pans and baking for 40-45 mins at 350F. While the cakes bake you can make your soak and frosting
6) after cakes have baked and cooled a little, poke holes with a toothpick and pour the milk soak over them, refrigerate for a few hours or overnight to let the moisture soak in
7) beat together ingredients for frosting and assemble your cake

Happened to make three cakes this week as the perfect way to celebrate 300+ followers!

We are so grateful for all of you and can’t wait to keep throwing more Baltimore Cake Parties 🥹🫶✨

Cakes made were:
✨ Banana cinnamon roll cake w/ brown butter cream cheese frosting and caramel

✨ Pistachio lemon cake w/ raspberry cream cheese frosting and lemon curd

✨Pistachio cardamom cake w/ mixed berry cream cheese frosting (phone didn’t really eat first on that one…)

Don’t mind us, just doing some very important research for the next Cake Party… 👀🍴

Our @ekibenbaltimore night market itinerary started off with tacos from @bar_clavel and some sweet treats from @roseavebakery, boba from @xingfutang_ny, the viral crab dip bagel from @cafedearleon, an amazing Basque cheesecake from @edocheesecake, and gluten-free pizza from @verdepizza.

We had such a wonderful time, stay tuned for all the surprises we’re baking up for the next Baltimore Cake Party! 🫶✨
