Method :

1. Soak 150 g (1 cup) Kabuli chana overnight or for at least 8 hours.
2. Pressure cook the soaked chana with a little salt until soft. *Tip:*Add a small potato while pressure cooking for a richer, thicker gravy.
3. Take a small portion of the cooked chana and potato. Grind into a smooth paste and set aside.
4. Grind 2 medium-sized onions into a fine paste. Heat 3 tbsp oil in a pan and sauté the onion paste until golden brown.
5. Add 1 tsp BON ginger-garlic paste and sauté until fragrant. Add 1 finely chopped tomato and cook until the oil begins to separate.
6. Add 15g BON Chole Masala, the cooked chana, the prepared chana-potato paste and fresh coriander leaves. Mix well and simmer for a few minutes, adding water as needed to adjust the consistency.
7. Serve hot with poori, chapati or rice.

BON Tip: For a thicker, creamier gravy, blend a portion of the cooked chana and potato before adding it to the masala.
