ATTENTION, ALL WHISKEY SNOBS!

Let’s settle something: Ice doesn’t ruin whiskey. It changes it.

And there’s actual science behind that.

TEMPERATURE MATTERS. Cooling whiskey reduces the volatility of aromatic compounds, which can soften the perception of alcohol heat, but also mute some of those beautiful aromas.

DILUTION MATTERS. Adding water changes the concentration and behavior of flavor compounds, potentially revealing aromas and flavors that were less apparent at full strength.

TEXTURE MATTERS. Temperature and dilution can change the way whiskey feels on your palate, affecting your perception of body, sweetness, and intensity.

So is whiskey better neat, with a splash of water, or over a giant rock?

That’s not a scientific question. It’s a personal preference.

Science explains what changes. It doesn’t dictate what you should enjoy.

Drink it neat. Add water. Drop an iceberg into your Glencairn.

Just don’t confuse your preference with a universal rule.

Knowledge Is Flavor.

Apparently, there are now 1,000 of you who enjoy having your drinking habits questioned by a guy with strong opinions and a Glencairn.

We’re genuinely grateful.

Thanks for following, laughing, challenging us, and sharing our obsession with what’s actually in the glass.

No hype. No pretension. No sacred cows.

Just better spirits, better conversations, and the occasional bruised marketing department.

We don’t bully people. We bully bad information.

Cheers to the first 1,000.

Tequila vs. Mezcal? There is no “VS.”

Tequila is tequila. Mezcal is mezcal. Different agaves. Different production methods. Different traditions.

And no—mezcal isn’t just “smoky tequila.”

Understanding the difference makes both more interesting.

“Additive free” tells you what wasn’t added to the tequila.

It does not tell you whether the tequila is well made, balanced, or worth drinking.

Additive-free is a production claim—not a quality guarantee.

Transparency matters. What’s in the bottle matters.

But at some point…

Taste the damn thing.

My wife had a conference. I had absolutely no business being there.

One of her colleagues knew I’d be tagging along — and, knowing my love of whiskey, showed up with a bottle of King of Kentucky as a gift for me.

We had never met.

Suddenly, I felt extremely invested in the conference.

Outstanding corporate culture. Thanks Jeff Graham!!!! taken in Sheraton At Sand Key Clearwater Beach FL by @booze_bully

Today, we raise a glass not in celebration, but in remembrance.

To the lives lost.
To the families and friends who still carry that loss.
To the first responders who ran toward danger when every instinct said to run away.
To those who served, sacrificed, and answered the call in the years that followed.

And to a country that, on one terrible morning, was reminded how much can change in an instant—and how much we share despite our differences.

May we never forget the lost.
May we never stop honoring those who mourn them.
And may we always raise a glass to the hope that what unites us will prove stronger than what divides us.

To them. To us. To our country.

Never forget. September 11, 2001. by @booze_bully

Mexico is bigger than tequila.

On October 24 at Cassy’s Underground in Parker, we’re going beyond the usual suspects and getting into the spirits that tell a much bigger story: tequila, mezcal, sotol and Mexican gin.

I’ll be breaking down what makes each category what it is, alongside Zoe Romero of Cencalli and Luis Sanchez of Altos, with the bottles doing the rest of the talking.

No snobbery. No marketing mythology. Just good spirits, good information and a few things you probably didn’t know.

One country. Four spirits. A whole lot to taste.

Authentico Blanco Organic Tequila

CONDITIONS
Calm, outdoors evening, 74 degrees, rested in Kenzie 50 minutes.

APPEARANCE
Shimmery crystalline, water white, random pattern droplets that cling to glass possibly portending sweetness.

AROMA
Light aroma, immediate raw agave, lime rind citrus, pepper and greenery akin to spicy herbs—mint, thyme, lemon balm, grass.

TASTE
Initial aromas take a back seat to cooked agave sweetness with an evolving array of peppers—chile and serrano—as it coats the mid-palate with a pleasantly oily texture.

FINISH
Balanced and warming, signing off with a faint echo of cinnamon and pink peppercorn.

FINAL THOUGHTS

Authentico Blanco is a wonderfully versatile tequila—equally comfortable in thoughtful mixology or poured neat.

Hard-core agave purists may find it a little too accommodating, but that appears to be precisely the point.

There’s also a story here worth mentioning. Authentico leans heavily into organic agave, sustainability and doing right by the land that produces the stuff in the first place. Those are easy words to put on a website. They mean considerably more when the tequila in the glass still tastes like tequila.

And this one does.

BULLY VERDICT: 3.5 / 5 BULLIES
AMM Panelist Rating: 82

Approachable, agave-forward and impressively versatile. It may not challenge the hardcore agave geek, but it doesn’t need to. This is a blanco designed to play well with everybody—and it does.

Tradition with a conscience.

Until next pour…

Labor Day. The rare holiday where doing absolutely nothing counts as honoring the occasion.

Cheers to the laborers.
Cheers to the long weekend.
And cheers to a Monkey 47 Martini at sunset.

You’ve earned it.

What does building a great agave program look like?

Sometimes it looks like sitting down with agave specialist Zoe Romero to audition 13 mezcals for Cencalli—different agaves, regions, mezcaleros and production methods, all competing for attention.

Some were classic. Others pushed well beyond the familiar.

Frog. Snail. Melon. Cucumber. Clay pots.

Zoe invited Booze Bully to bring another informed palate to the research, and we were honored to contribute as she continues refining one of Denver’s most exciting agave selections.

Because a great spirits program doesn’t happen by accident.
