Brown Butter Chocolate Chunk

Y’all- Make these. Right now. They’re SO good!!
This chewy chocolate chip cookie is made with browned butter and chunks of chocolate for the perfect, crunchy on the outside, gooey in the middle cookie of your dreams. They’re soft, chewy, crunchy on the edges, perfectly salty-sweet + loaded with just the right amount of chocolate. The browned butter gives just a hint of nutty goodness that truly elevates the entire cookie and the sprinkle of flaky sea salt on top takes it to the next level. The best part? They stay fresh and soft for days.

Ingredients
* 3/4 cup (168g) butter
* 1 cup (212g) packed brown sugar
* 1/4 cup (50g) granulated sugar
* 1 large egg + 1 large egg yolk, at room temperature
* 2 tablespoon vanilla bean paste
* 1 3/4 cup (220g) all-purpose flour
* 3/4 teaspoon baking soda
* 1 teaspoon corn starch
* 1/2 teaspoon kosher salt + more flaky sea salt for sprinkling
* 1/2 cups (80g) semi-sweet chocolate chips
* 3/4 cups (105g) 56% cacao chocolate (roughly chopped)

Instructions
* Place the butter in a small saucepan and set over low heat. Stirring constantly, brown the butter until golden brown, remove it from the heat and allow it to cool for at least 5 min.
* In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Use a spatula to mix together. Add the egg, extra egg yolk, and vanilla bean paste and mix well.
* Add in the flour, baking soda, cornstarch, kosher salt and fold until no streaks of flour remain, being careful not to overmix your batter. Fold in the chocolate until evenly distributed. Do not over mix.
* Cover the bowl and place it in the fridge to chill for at least 1 hour (up to 24 hours)
* Preheat oven to 375°. Bake for 12 minutes, switching racks halfway through.
* Remove from oven and sprinkle with flaky sea salt. ENJOY!

Traditional Chocolate Chip

These are my typical go-to, a crowd favorite and more importantly, quick and easy to make. This recipe is an adaptation of one given to me by one of my most favorite people/closest friends and is the perfect base for customizing to your liking (although they’re amazing as is!). Add nuts or even substitute peanut butter chips for the chocolate chips- you truly can’t go wrong. They’re pillowy & soft. They’re thick & chewy. They’re quite literally everything you want in a chocolate chip cookie and even after a couple of days they maintain their soft texture.

Ingredients
* 1 cup butter, softened
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs, room temperature 
* 3 tsp vanilla extract
* 3 cups A.P. Flour
* 1 tsp baking soda + 2 tsp hot water
* 1/4 tsp salt
* 1 cup semi-sweet chocolate chips
* 1 cup milk chocolate chips
* 1 cup walnuts (optional)

Instructions
* In the bowl of a stand mixer, cream together butter, brown sugar and white sugar.
* Beat in eggs one a time, stir in vanilla. 
* Dissolve baking soda in hot water. Stir into dough along with salt. 
* Fold in flour, chocolate chips & nuts.
* Cover the bowl with plastic wrap and place in the fridge to chill for a minimum of 1 hour (the longer, the better). 
* Preheat oven to 350°. Drop large spoonfuls on greased or parchment lined cookie sheets. 
* Bake 10-12 minutes, switching racks halfway through.

Recipe #1 of my quest for the perfect cookie! 

Brown Butter & Dark Chocolate

I gotta be honest, I was expecting more from this one. Overall, was it good? Yes. Was the texture everything I want in a cookie? Also yes. But the flavor was just ok. I absolutely loved the combination of chocolate chips and chunks- The chips gave the comfort of a traditional chocolate chip cookie while the chunks provided a delightfully gooey, melty burst of chocolate. As for texture, it was perfect! Soft and pillowy with crisp edges, providing that ideal “soft crunch” when bitten into. However, I like my Chocolate Chip Cookies sweet and in my opinion, this one could’ve been sweeter. The next time I make this recipe I’ll use a chocolate that has a lower cacao content.

* Place the butter in a small saucepan and set over low heat. Stirring constantly, brown the butter until golden to medium brown, remove it from the heat and allow it to cool for at least 5 min. 
* In a large mixing bowl, combine the brown butter, brown sugar, and granulated sugar. Use a silicone spatula to mix together. Add the egg, extra egg yolk, and vanilla and mix well.
* Add in the flour, baking soda, kosher salt and fold until no streaks of flour remain, being careful not to overmix your batter. Fold in the chocolate until evenly distributed. Do not over mix. 
* Cover the bowl and place it in the fridge to chill for at least 2 hours.
* Preheat oven to 350°. Bake for 14 minutes, switching racks halfway through. **Note that these are a darker cookie so don’t be alarmed at the color*
* Remove from oven and sprinkle with flakey sea salt before enjoying.
