Braised shortribs!

Meals on wheels - cooking for friends but not eating at home!

@norfolk_smoke_pit brew and brisket rub with a whole grain mustard binder, before a 3h smoke and 3h braise on these short ribs before a gentle reheat in the braising liquor the next day.

Served with charred cabbage with lemon, pecorino and @jdshothoney, a slab of potato dauphinoise and a glass or two of red wine.

Cheeseskirt burger!!

Supermarket burgers do the job, but they have to be pimped up a bit to really land!

Pimp 1 - cheese skirts - grated paremesan and cheddar in a medium heat fryingpan and place the bottom bun on top. Let the cheese melt and form a crist before flipping to create the skirt. Needed, no! Tasty - hell yeah!

Pimp 2 - Bacon Jam - you know it, you love it, then you have it!

Grilled nectarines!

So dessert is a bit of a blind spot so trying new things - and this was a blinder!

Simple, fresh, tasty and even I couldn't mess it up!

Nectarine halves brushed lightly with some olive oil and drizzled with honey.

Direct grilled to get some flavour before moving to a dish for 10 mins of offset to soften the fruit.

Got to be brave with the direct - don't move it and keep it a little longet than you think!

Served with honeycomb icecream for the win!

Sunday Roast is always a great choice!

Sunday's are perfect for a roast, and pork works so well on the rotisserie giving excellent crackling and perfectly cooked meat.

Temps checked with the @thermapen and held with the pouch from @cutter_n_co

Surf'n'turf baby!

Overcoming my #Meatopia fomo with a couple of excellent ribeyes to do a surf'n'turf on the weber E6 Kamado. Such a good grill with excellent capacity to do offset and direct cooking for a whole meal.

Keeping temps correct with the @thermapen and the veg warm with the BBQ Blanket (who says bbq gear if just for meat?!)

Been a while since being on the grill due to life, but feels good to be getting back!

Bbq isn't always about the show with the best grills, but is always about cooking good food over flame and being #initforthegrills !

European supermarkets seem to always have better food than us in the UK in some ways and I always enjoy knocking up a few meals on a bbq whilst away.

3 meals here - Pork skewers with asparagus, burgers, and skewers, sausages and prawns. Yeah a bit random, but all tasted great especially washed down with some Tinto de Verano!

Pulled pork sliders!

A post I forgot to do as the food was too good!

Love pulled pork - a forgiving low 'n' slow that lets you get on with other things whilst giving you great flavours!

I know there's a binder debate, but @ me - I like a bit of mustard on my pulled pork.

Chicken Satay Lettuce wraps!

A great tasting recepie from @jamieoliver 's #BBQ book - really delivers bold flavours from the grill.

Pimped it up with home pickled onions, pickled cucumber and egg fried rice.

Balsamic and Garlic Chicken

Fantastic flavours in this simple cook, proving that BBQ soesn't have to be complicated to deliver a fab meal!

Chicken reated and kept warm in the @cutter_n_co BBQ blanket whilst the corn riblets were cooked on the grill.

A great piece of kit to help manage cooks on the bbq that are competing cor grill space.

Another great bbq in the bag!
