The next focus on the was Cazadores. We followed the entire production process from agave being shredded and diffused with hot water to extract maximum sugars from the piñas, and into fermentation inside 50,000L tanks where Mozart plays, something they believe supports yeast health during fermentation. We then saw where mixture undergoes double distillation which turns low ABV ordinario into tequila, and then time spent in their aging warehouses when required. We concluded with a full tasting and a close look at their sustainability efforts, which includes using a biomass boiler system that runs on agave fibers and provides the steam for extraction.

The day also included by an in-depth additives class with @willyoubemyguest that broke down common additives, how they alter tequila, and how to identify bottles that may be relying on them. This past week I was honored to be invited to the James Beard Awards presents: Mixología de México, an immersion trip with Tequila Patrón and Cazadores. The first night was all about settling in and sharing cocktails with new friends. A huge thanks to @roberto.nunez.moreno and @willyoubemyguest for thinking of me and extending the invitation as well as the @beardfoundation and @academia_patron for provide this amazing educational opportunity! Four cocktails. One final countdown. Built for the last toast of the year and the first sip of the next. Only at the Bar at the Baccarat Hotel. ✨🥂

Evergreen Mezcal Negroni
Smoky and structured. Dos Hombres mezcal, Campari, cherry liqueur, and Amaro Lucano with an expressed orange peel.

Yuletide Fire
Warm and layered. Coconut infused Cincoro Blanco with falernum, allspice dram, lemon, and coconut syrup. Finished with toasted coconut.

Confetti Noël
Bright and dry. Hendrick’s gin, lemon, red wine vanilla syrup, topped with Pernod Ricard Brut. Cranberry and rosemary for light aromatics.

Polar Express
Cold and precise. Grey Goose Altius, pear liqueur, dry vermouth, and orange bitters. Served with a caviar spoon.

Yesterday I had the opportunity to taste over 100 years of Gruard-Larose, dating back to 1919! It was truly one of the most touching tastings I've ever attended. It was amazing to taste so many vintages and talk to the vineyard manager about all the different vintages, bottles, labels and how the philosophy of the winery has stayed consist through the ages while allowing for modernity.

Chateau Gruaud Larose is a 2nd Growth Saint-Julien whose uniqueness is that its 82 hectares of vines are in a single, undivided vineyard. It is affectionately known as the "wine of kings and the king of wines”.

Pictured are the 1919, 1964, 2005. My favorites were the 1924 and 1953. Both were elegant and floral with spiced notes on top of dried red fruit.

7 years ago, my mentor @jasonewagner saw a young and hungry somm and challenged me to sell all of our Heitz collection. (At the time we had one of the largest selections of Heitz Cellars in the city) Little did he know that I'd fall in love with the wines and continue to pursue my quest!

2001 Poggio Antico Altera Brunello di Montalcino

Poggio Antico is one of Montalcino's most elevated estates, with vineyards averaging 1476 feet above sea level.
🍷
Altero is made from a selection of the best wines in the cellar. Aged for 30 months in French oak tonneaux (500 l), followed by 18 months of bottle aging. 1983 was the first bottling of Altero but due to changes in regulations, it has only been a Brunello di Montalcino since 1995.
