Getting a little easier to throw the chuck up on the bandsaw with heavy beef. My body is thankful. Next is figuring out how to drop the chuck on the other side of my bandsaw blade. Always appreciate learning different ways to break down animals. 🤟🍻🔪 . . . #oregon #butcher #beef #wholeanimalbutchery heavyshit by @breaking_brisket

Meet Marena (@breaking_brisket), an absolute legend and a custom exempt butcher 🔪 She’s got 12+ years under her belt and has cut thousands of animals, so when she calls my beef “the Wagyu of dairy beef” she means it. Shes been processing my cows since day 1! Also, BIG NEWS! I’ve finally opened up my online shop! You can order dairy beef for local pickup in Portland, Oregon or for national shipping across the US. Quantities are limited and since we’re the only ones shipping this kind of beef, it sells out fast! Hunting season is controlled chaos. You have a cut schedule, an employee schedule, smokehouse schedule, a plan. A plan for the day, week, month.. next 4 months of the year. Then you get 50-60 deer a day on top of your domestic load. Awesome. This kind of workload/lifestyle isn’t for everyone. I say bring it fucking on. So thanks to all your hunters out there for choosing our shop! @the_meating_place_pdx . . . #wholeanimalbutchery #meatingplacepdx #huntingseason #deer #elk #bear #goat #rifle #local #butchershop #fillyourfreezer #hillsborooregon #lifewiththeknife #workharder #railbreaker #productionlife #lovewhatyoudo by @breaking_brisket

Had a great time training with these guys! Training a chef differs a little from training a butcher at the shop. I’m always up for a challenge and they did an amazing job. Looking forward to doing more chef/butcher training in the future. ❤️‍🔥🔪 #teamworkdreamwork . . . #wholeanimalbutchery #butcherblock #pork #openfirecooking #pdx #restaurant #jeju #chefskitchen #hoglife #lifewiththeknife #local #butcher #oldschoolskills #lovewhatyoudo by @breaking_brisket
The quality of our dairy beef is no mistake. You can’t just grab any old dairy cow and get beautiful beef. It takes investment and excellent practices from the dairy, investment in learning what makes a dairy cow top quality beef, investment back into the cows when they’re done milking, and investment in learning from each carcass. With the help of Marena (@breaking_brisket) who’s been a butcher for 12 years, I’ve been able to learn about many of my cows. Being able to examine the carcasses whole helps me develop an eye for what to look for in live cows. This has been especially important when utilizing different breeds and different ages of cows. This is one of the many challenges that has made the ex-dairy cow model unappealing to producers. Since I’m not engineering my cows to look a uniform way, I have to have a deep and thorough understanding of the cows to bridge customer expectation with product outcome. The investment from all parties, from beginning to end, is showcased in the high quality of the beef we sell. #regenerativefarming #dairybeef #longevity #sustainablebeef #ethicalfarming #knowyourfood #pdxfood by @breaking_brisket
