This earth month, I’m very much honored to be featured in the @hollywoodreporter’s Sustainability Issue, highlighting creators critiquing our culture’s consumerism epidemic. It’s always heartening to see more mainstream publications focused on spotlighting sustainability efforts, and it was a pleasure to dive into the concept of “de-influencing” with the insightful Lovia Gyarke for this piece. If you know, you know! We wait all year for this moment… BACKYARD MANGO FRUIT ROLL-UPS HAVE LANDED 🥭🤍 You can do this with just about any fruit you have on hand. Simply blend, spread puree on a nonstick sheet, and dehydrate. I set my dehydrator to 130F and it took around 6 hours this time around. If you don’t have access to a dehydrator, you can use your oven at the lowest possible temperature. Bake for 3-6 hours until it’s no longer sticky and peels off easily. Let it cool completely, then roll up. Enjoy your delicious, healthy snack! 🥭✨What else should I make with the abundance of summer fruit??? Feeling grateful to have been featured in this @nerdwallet piece about mindful spending, minimalism & rejecting the normalization of excessive displays of wealth online. I’ve said it before but it bears repeating— it’s always a pleasure to see more mainstream publications focusing on sustainability, and NerdWallet writer Clay Jarvis is allowing for more of that through pieces like this one. My goal for 30 was to be debt-free, and while I may not have much in the way of flashy assets to my name, I accomplished my goal— thanks to simplifying my lifestyle, I don’t have debt and I don’t worry about whether the majority of my spending is aligned with my ethics. GARBAGE JUICE!! 🗑️🫚🧃These lil frozen ginger shots made of produce otherwise bound for landfill are a bit of a throwback to 2021 when my food waste video series called “eating garbage” went viral. Hard to believe I’ve been making food waste recipe videos online for more than 6 years! Life has changed in more ways than I can count since I first started, but I’m still at it, and if anything, my passion is stronger than ever. If there’s anything I can encourage you to do when it comes to being mindful of your environmental impact, it’s to MAKE IT FUN! If you flex your creativity and learn to make the process enjoyable, the practice of sustainability feels a lot less like a chore and a lot more like just a part of your life. Our day to day choices DO add up, and the small changes we make have more of an impact than we realize, as cliche as it sounds, so we might as well have fun with it ¯\_(ツ)_/¯ by @brennankai

🥭 Backyard Mango Coconut Pound Cake 🧁(adapted from the original recipe by Chef De Home) This one will ABSOLUTELY be added into my summer mango recipe rotation. Inspired by my 98-year-old nana’s pound cake that we used to eat by the lake in Alabama when I was a kid, sometimes with blueberries picked off the bushes in her yard. There’s nothing like incorporating what grows in your own environment into some classic old-school sweet treats!! 🤤 Ingredients* ¾ cup melted coconut oil* ¾ cup granulated sugar* 2 large eggs (can sub flax eggs for a vegan cake)* 1 tsp vanilla extract* ¼ cup full-fat coconut milk* ¾ cup mango purée (about 2–3 ripe mangoes)* 1½ cups all-purpose flour* ½ tsp baking powder* ½ tsp baking soda* ¼ tsp salt* Powdered sugar + fresh mango for serving (optional but very much encouraged!) Directions1. Preheat oven to 325°F. Grease and flour a loaf pan or 7-inch round cake pan.2. Blend ripe mangoes into a smooth purée.3. Whisk together the coconut oil and sugar. Add the eggs one at a time, then mix in the vanilla, coconut milk, and mango purée.4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.5. Fold the dry ingredients into the wet ingredients until just combined.6. Pour the batter into your prepared pan and bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean.7. Let cool in the pan for 15–20 minutes. Dust with powdered sugar and top with fresh mango!! 🥭 by @brennankai

You know I’m alwaysssss looking for ways to make the most of the food I already have, even when it’s past its prime. This week that meant turning a wrinkly apple, a spotty mango from my backyard, and a few extra carrots into a batch of muffins (recipe inspired by my friend @relauren!!) 🙏🏽June is Upcycled Food Month, & it isn’t just for humans!! While I was baking, my backyard stray turned BFF Stryker was enjoying these @shamelesspets treats made with rescued & upcycled ingredients. I love supporting brands that find creative ways to give nutritious food a second chance and help reduce food waste along the way. Plus Stryker loved their tuna & catnip treats! Whether it’s baking with produce that’s past its prime or choosing products that help repurpose overlooked ingredients, there are so many ways to be part of the solution 🐱🥭🥕 #shamelesslyupcycled by @brennankai
