It’s not just for bread.

One Folding Proofer, a whole lot of uses:

🍞 Sourdough and yeasted bread
🍩 Enriched dough
🥐 Laminated dough
🥣 Homemade yogurt
🫙 Kombucha, kefir, and tempeh
🧄 Black garlic
🍲 Slow-cooked stews

Then it folds flat for easy storage.

To celebrate the Sourdough Home Plus launch in the UK, we hosted a hands-on sourdough class with @breadaheadbakery 🍞

Bakers fed starters, mixed and shaped dough, and took home their baked loaves. We laughed, broke bread together, and of course shared the joys of baking.

Thank you to our entire community and to everyone who joined us for this unforgettable evening. We can’t wait for what’s ahead! ✨🌾

The first reviews are in, and Patricia already has her holiday list sorted.

Our new Bread Knife made with @jordanlamothe_ is starting to land in kitchens. We love hearing how it’s handling your loaves.

Want to try something new this fall? Make these Cinnamon Rotiboy and don’t thank me.

Proofed to perfection in my folding proofer from @brodandtaylor

New recipe just posted and you know where to find it.

Days of proofing. One second to score. Make it count.

We made our new Bread Lame for that one second. The soft-grip handle won’t slip in floury hands, and the blade sits close to the handle so your score lands right where you want it.

Happy World Bread Day! 🍞🥖

We're incredibly lucky to share the joys of bread baking with our community. What are you baking this weekend to celebrate? Tell us in the comments! by @brodandtaylor

a sneak peek into our cinny roll prep 👀

I am a busy gal in a small home! not only does the day get cut in HALF because of the Brod & Taylor Folding Proofer, but I can also slide it out of sight ◡̈

+ it gives a little extra control over the fermentation process so we know the cinnys will turn out just right for you every time ꩜ by @brodandtaylor

In my opinion, there are two options for top-tier starter care (plus an added colder feeding routine for you weekend bakers), and the @brodandtaylor New Sourdough Home Plus makes it really easy to stick to a routine.

For once a day feedings, I like to keep my Sourdough Home Plus at 66°F and feed it a 1:5:3 ratio (starter:flour:water). I like to keep a small amount, for example, 3 grams of starter to 15 grams of flour to 9 grams of water. Then, when I want to bake, I feed that 25 grams with what I need to get enough for baking (you’ll lose a bit with evaporation + jar residue). What’s so great is that you can increase the temperature for that feed so you can bake soon! So if I need 100 grams for a loaf, I would take that 25 grams and feed it 40 grams of warm water and 40 grams of flour, and then pump up the Sourdough Home Plus to 84°F. This mixture could then be used to bake in as little as 3 hours.

If you prefer your starter warmer, which is my preference, I do the same feeding routine but at 75°F, repeating it in the morning and before bed. I accumulate a bit of discard, and use it to make sourdough pancakes for my kids once a week.

If you’d prefer less maintenance, but want to keep your starter strong and sturdy, feed it the same ratio I wrote above but keep it at 48°F for 5 days at a time. It will smell a bit acidic when you take it out, but the important yeast and bacteria will still be present. A 1:1:1 ratio kept at 82°F will bring back the beautiful aroma you’re looking for.

The hardest part of baking a great loaf shouldn’t be cutting it.

Nothing about the Bread Knife was accidental. We worked with @jordanlamothe_ to design every detail around the way bread is actually cut.

✔️ The serrations are placed to bite into a crackly crust without sawing at it or crushing the crumb underneath.
✔️ The curve of the blade keeps it moving through the loaf in one smooth motion.
✔️ The balance between the blade and handle lets the knife do the work so every slice comes out even.
✔️ And the stabilized, unique handle feels right in your hand with its own grain that gets better with years of use.
